Stir fry mini green cabbage and fry yellow tofu, A dish to ward off hot weather

Hot weather can affect our appetite, therefore we need to choose the right menu to make us appetite again. Currently in my area, namely the city of Binjai, it is experiencing the rainy season, although the weather is not completely rainy every day, sometimes there is hot weather during this rainy season. Like today, the heat of the sun started to be felt from the morning, usually this hot weather will last until the afternoon.I choose green vegetables that contain lots of fiber and water, so I can feel refreshed. I will choose mini green cabbage for today's vegetables, I will stir fry mini green cabbage.

Mini green cabbage has a fresher taste than normal cabbage, its green color will be greener if we cook it, generally this vegetable is cooked by sautéing half-cooked, so that the freshness and green color of this vegetable is maintained.

To meet my and my family's protein needs, I also fry yellow tofu. Yellow tofu has a denser and chewier texture than other tofu. Fried yellow tofu goes well with stir-fried mini green cabbage, creating a dish that can whet your appetite in hot weather.

The ingredients

The ingredients I used to make today's lunch are :

500 grams of mini green cabbage
5 pieces of yellow tofu
5 cloves of garlic
3 cloves of red onion
5 pieces of chili ticks
2 tomatoes (choose those that are half ripe and still firm)
1 tablespoon of salt
1 packet of ground pepper
300 mL of water
300 mL of cooking oil

To make a dish of stir-fried mini green cabbage that is fresh and spicy, I use chili peppers, if you don't have, you can use cayenne peppers. The tomatoes used should also be semi-ripe and still firm, so that when sautéed, the freshness of the tomatoes is maintained.

Preparation

First, I will prepare the yellow tofu, I don't use spices, only salt, because the fried yellow tofu is an accompaniment to stir-fried mini green cabbage. Mix a little salt with water, I used 100 mL of water.

Then I cut the yellow tofu into two parts, I cut it diagonally, resulting in triangular pieces of yellow tofu.

Put the tofu pieces into the salt water, leave for a moment so that the salt water soaks into the yellow tofu.

While waiting for the yellow tofu to be soaked in salt water, I will process mini green cabbage, the way to process it is very easy, I just cut off the cob, then the green cabbage leaves will fall off by themselves, the small size of the leaves makes it easier for us to process them, I don't need to cut the leaves.

Then I washed the mini cabbage leaves, drained them so that the water content was reduced.

Next, I peeled the skin of the shallots, for the garlic I peeled the skin. Then wash the garlic, shallots, tomatoes and chilies ticks.

Slice the garlic and shallots, we can slice them thin or thick, according to our taste.

Then cut the tomatoes into several pieces.

Also cut the tick chilies into several pieces. I cut it into 3 parts for every one tick chili.

How to cook

Time to cook, first I will fry the yellow tofu, heat the cooking oil.

Put the yellow tofu pieces into the hot cooking oil.

When one side is dry, don't forget to flip it, so it cooks evenly and doesn't burn on one side.

After both sides are dry, then lift and drain the yellow tofu so that the cooking oil level is reduced.

Next I will cook stir-fried mini green cabbage. First heat the cooking oil, about 2 tablespoons. I don't use much cooking oil to stir-fry mini green cabbage. Heat the cooking oil but not too hot.

Then add the chopped garlic, shallots, tomatoes and chilies, sauté until all the ingredients are wilted.

Add the mini green cabbage.

Add 1 tablespoon salt.I like salty dishes, if you don't like the salty taste, only add 1/2 tablespoon of salt

Add ground pepper to taste.

Cook until the mini green cabbage is wilted, I only needed about 3 minutes to cook it.

The result

Stir-fried mini green cabbage is ready to be served.

Serving method

I will eat it with warm rice, fried yellow tofu and orange fruit. During hot weather like this, consuming citrus fruit, which is rich in vitamin C, can help the body feel refreshed.
