Hello friends in Vegan community Lovers, One of my favorite foods is fried rice. I like to make several variations of fried rice, one of my favorite variations of fried rice is pineapple fried rice.
Pineapple fried rice has a spicy, savory and fresh taste typical of pineapple. The combination of several spices and pineapple produces a unique and rich taste of fried rice. I really like this pineapple fried rice.
The ingredients
I'll make two servings of pineapple fried rice, the ingredients I use to make this pineapple fried rice are :
2 portions of white rice
1 pineapple
3 cloves of garlic
3 cloves of shallots
2 red chilies
10 cayenne peppers
1 pack of ground pepper
1 tomato
1 carrot
1 tablespoon salt
2 tablespoons sweet soy sauce
50 mL cooking oil
To give a fresh taste to the fried rice, I used unripe pineapple. Apart from its slightly sour taste, unripe pineapple also contains less water than ripe pineapple. I like the spicy taste of cayenne pepper, that's why I use more cayenne pepper than red chili. If you don't like the spicy taste, you can reduce the amount of cayenne pepper.
Preparation
Before making fried rice, I will prepare the ingredients, because when cooking fried rice, I will not leave the fried rice without stirring, so that the fried rice doesn't burn on the bottom. First I will wash the pineapple, then I cut it into two parts.
Then I scrape out the middle, I will make it into a bowl for my fried rice.
Next I will prepare the spices, first I peel the shallot skin, while I have peeled the garlic skin beforehand.
Then I removed the stalks of cayenne pepper and red chili.
next I washed the garlic, shallots, red chilies and tomatoes.
After washing it clean, I pureed the garlic, shallots, red chilies and tomatoes with a blender.
I also washed the cayenne pepper, then cut it into 2-3 parts.
Lastly I will prepare the carrots, wash the carrots and cut them into several pieces.
Then slice the carrots into squares or dice.The orange carrot pieces will enhance the appearance of the fried rice and also enrich the taste.
Now that I have the spices, carrot pieces and also a bowl made from pineapple, the next step is to make fried rice.
How to cook
1.Heat cooking oil, but not too hot.
2.Add the ground spices to the cooking oil, saute until fragrant.
3.Add the carrot pieces, cook until the carrots are wilted.
4.Add the white rice, then stir to mix with the spices.
5.Add salt, sprinkle over fried rice, stir to combine the salt.
6.Add the sweet soy sauce over the fried rice, stir to mix in the sweet soy sauce.
7.Add ground pepper to taste, stir the fried rice to mix with all the spices.
8.Finally add the chopped cayenne pepper, then turn off the stove.
The result
Spicy and savory fried rice is ready to be enjoyed.
Next, put the fried rice into the pineapple bowl. The hot fried rice combined with the bowl made from pineapple will produce spicy, savory and fresh fried rice.
