Day 15 - Homemade Soup
I got inspired by the "30 day not-so ordinary ordinary items challenge" but as I love giving things a personal twist, I decided to change the format a bit for myself so it suits me better. I've adjusted it to the 30 pictures - 30 stories challenge. But some days you will see that I also use not-so ordinary ordinary objects.

Publish one picture a day during 30 days and write a story about that picture. This can be anything, any object in the home, a person, scenery or a pet. I'm going to share a diversity of pictures and challenge myself to step outside of the box.
Today it's another food post I'd like to share with you on day 15 already, halfway through the 30 day challenge! I know many people love to eat soup, I was just not one of them. I always enjoyed soup like once a year tops because you could simply not get me warmed up to eat it. I never really felt the excitement for a soup dinner or lunch to be honest. I guess I missed my calling regarding trying out soup recipes as the soup department was always my boyfriend's. I had a few of these dinner recipes that I didn't feel like making myself so I never did.
That changed a few weeks ago when I finally went ahead and created a version inspired by three recipes I found online when I was looking for soup with a coconut milk inside. I realized that it may be a good fit when I was looking inside the kitchen cabinet and found 3 unused cans. When browsing for ideas, I found that there are loads of combinations that can work and I had a lot of vegetables in the fridge that I could possible use as ingredients. I even ordered yucca for it the week before but as these were frozen, I wasn't in such a hurry to use it.
The ingredients
Although I saw a lot of options with many ingredients, I decided to first test it out with a few ingredients that would probably also make my daughter happy (which I find important as she refuses a lot of food, lol) and therefore I went for a few ingredients:
- vegetable broth
- coconut milk
- sweet onion
- fresh garlic
- potatoes
- yucca
- carrot
- baked chicken filet in small parts
- pepper & salt
- Maggi
It's a very simple process:
Fruit the onions in some olive oil until soft, add the fresh garlic and then top it off with a liter of broth (I used vegetable broth as I had it in the cabinet and it was a good combo). Now simply add all the cut vegetables and leave on the fire for about 45 minutes. Top it off with the coconut milk and add pepper, salt and Maggi .. Enjoy!
I never thought I'd say it but I'm now a soup fan and suddenly see a world of possibilities regarding other variations of this soup. I absolutely enjoyed every sip of it and I could not wait until the next day for lunchtime to eat the remaining part of it, lol.
The best news: my daughter is a fan too! Double WIN!
