Hello hive community! I would love to share my own version in preparing white sauce for spaghetti or pasta. I loved to include lots of veggies as I can, this DIY spaghetti is simple and delicious. One of my great options of comfort foods and a quick vegetarian dish for a busy - hustle weekdays.
Ingredients:
Spaghetti/ pasta 400 grms
Mushroom 200 grms
Cooking cream
Milk 2 cups approximately
Coriander leaves 1 bunch/ as desired
Leeks 2 sticks ( cut into pieces)
Onion 3 mediums
Garlic 3 cloves
Salt as per taste
Pepper 1tspn coarsely ground
Methods:
In a wok, heat oil add in onion, saute for 3 min.
Add in mushroom, cook in a medium flame, continue mix till mushroom is halfway done.
Add in salt.
Mushroom has been cooked, transfer to a container and set aside
Meanwhile , in the same wok, heat oil and add in garlic, saute for 2min.
Add in remaining onion, saute for 3 min.
Add in black pepper and salt.
Add in leeks, saute till cook. Put to low flame.
Add in coriander leaves. Continue to saute.
Continue to saute veggies, till leeks are tender. Do not overcook
Add in cooking cream and 1cup of fresh milk., stir and simmer for 4 min.
Meanwhile puree cooked mushroom, adding half cup milk.
Add pureed mushroom in the sauce. Simmer for 2 min. Continue stirring.
Pureed mushroom will also add texture to the sauce.
Add in cooked spaghetti/ pasta , mix and stir till well combine.
And your pasta is ready.
Pureed mushroom will add more taste and It will give a mushroom flavor to the sauce.
You can add any vegetables you think that suits your pasta such as zucchini, carrots , peppers, basils, rosemary, and etc.
