Hello hive community, a nice day to everyone. It was not my first time upload how I prepare this dish, however I would like to share again how I make my pumpkin sweet potato soup. A healthy, light and hearty dish perfect for flat bread or with white rice.
Ingredients:
Pumpkin 300grms
Sweet potatoes 200grms
Onion 1 medium
Coconut cream 200 grms.
Methods:
Chopped and sliced pumpkin and sweet potatoes
Steam vegetables till tender.
Puree steamed vegetables adding a little amount of water, puree till smooth texture.
In a wok. Heat oil, add onions. Saute for 2 min.
Add in pureed vegetables, stir.
Set on low flame.
Add in coconut cream. Stir. Mix well till well incorporated.
Add salt as necessary.
That's it as simple as that.
Not only healthy, but also simple recipe ideally to prepare for a busy weekdays, it requires very basic ingredients so this is always an option on my cooking plan list.
