We are missing this bread a lot, so I decided to make it today. Our family calls this recipe cheese bread and we love it. It's simple to make and so tasty. The dough was soft and easy to work with. You can actually make it in advance and freeze, just simply defrost and bring to room temperature before using it.
In this recipe, I used a mild cheddar cheese and to tweak this bread, I added pineapple chunks for sweetness.
To make the Dough:
Instant yeast, 1 ½ tsp
Sugar, 1 tsp
Lukewarm water, 1 cup
All purpose flour, 4 cups
Salt, 1 tsp
Olive oil, ⅓ cup
Milk , ½ cup
Pineapple chunks, fresh or from the tin
Preparations
Mix the yeast, sugar and the lukewarm water in a bowl. Set aside.
In a large mixing bowl, combine the flour, salt, milk, olive oil and yeast mixture.
Knead the dough by hand or by hand mixer, The dough should form an elastic and non sticky texture, About 8 minutes.
Form the dough into a ball, Brush the surface of the bowl with olive oil (to avoid the dough from sticking and getting dry). Let it rest for 1 hour.
Preheat the oven to 250 degree celsius for 20 minutes.
Deflate and knead the dough for a couple of minutes. Divide it into two balls. Roll the dough into a round circle or rectangular.
Place it in a baking tray and poked the dough with a fork to prevent it from rising in the oven.
Place the chopped pineapple chunks on the rolled dough.
Next, add the grated cheese on top.
Bake it for 15 -17 minutes and serve.
I have put in the pineapple chunks first, The cheese helps to hold the chunks when it's melted on top.
Try this recipe with or without pineapple chunks, So delicious and best with hot beverages. Fresh and Tasty.
