My Crunchy Corned Beef Patty with Grated Cassava

Have you tried to include cassava in your patty recipe? I bet you wouldn't dare to try it for once but I today, I will teach you how to do it with just few ingredients.

When I did my instant burger patty using corned beef, I usually put potatoes as an extender as it gives the patty a good and balance taste and texture with some vegetables. However, this recipe were just an instant or copy cat burger patty. We will just need 1 can of corned beef and let the other ingredients blend and make a crispy patty as simple as frying a fries.


So why I used cassava?

It was an accident. I have left my 2 kilos of cassava after I made Nilupak last December 30. Since it was my first time to actually tried to cook and even made a dish using it, I wasn't aware that I have to use my unpeeled cassava that's why when I cut it and starts to check it has several rotten spots. I have to cut those affected area and discard it completely. I only gathered 2 cups out of 2 kilos which supposed to be more than 5 cups.

I was so disappointed because I almost wasted and now belongs to trash. I'm still lucky that atleast I have 2 cups so I have to think fast what would I do with this left of me. I have to maximize the stocks which I have in my pantry. I have a can of corned beef so I just decided to make a patty and here are the ingredients.


Makes 20-25 pcs around 2 tbsp each

2 cups grated cassava
1 can corned beef
2 whole eggs
3 cloves of garlic minced

1 small red onion minced
cornstarch/flour
vegetable oil for frying
salt and pepper
ketchup for dippings


Here's how:

1.Peel cassava, cut into small chunk and wash with water. Grate cassava and squeeze excess moisture. Set aside.

2.In a mixing bowl, combine grated cassava, corned beef, eggs, garlic, onion, cornstarch/flour, salt and pepper. Just use a fork for this.

3.Prepare a frying pan with vegetable oil over medium high heat. Scoop atleast 2 tbsp for each patty. Adjust the heat to low medium to prevent cooking the patties too fast. It is important that the cassava will cook through since we put a lot compare to other ingredients.

4.Repeat the process until done. Drain excess oil and best serve while still hot and serve it with ketchup also. Enjoy the crunchy and flavorful corned beef patties at home.

It is a good snacks but we prefer to ate it as our dinner. Every bites was so crunchy and the grated cassava enhances the texture. Aside from that it is new to me to taste a deep fry cassava like this one so I guess it is a good option for me and this will be added on my list of recipe.
