Burong Mangga (Fermented Green Mangoes)

Hi everyone, how are you today? Lately I've been so obsessed how fermentation really works. Here in the Philippines, it is not common to see a household doing that fermenting of foods like this way.

One of the first fermented food that I consumed was an apple cider vinegar. This has been with me last December 2, 2021. This really gives my gut to digest my food so well. It helps me to aide my constipation which sometimes happens when I don't eat enough vegetables and fiber.

With 1 tsp of ACV dilluted in distilled water and consume it early morning without any food taken. Aside from that I have been drinking blue ternate tea after every meal. Drinking tea compared to coffee gives me a huge difference.

I don't have too much acid in my stomach, it made me more relaxed and calm throughout the day. Aside from that I cut my sugar intake little by little since I limit my coffee into just twice a day compared to 3 to 5 times per day. I'd still love coffee, just limiting it right now.

But today, let me share this recipe which I've known ever since I was in grade school. It has been a school project for grade 4 students to do Burong or Binurong Mangga. It is just simple and only need water, salt and unripe mango.

We use green mangoes 'cause it's has the perfect flavor and not yet sluggish. This is how it goes:


1.I peeled 5 pcs of mangoes and cut in half and slice it diagonaly. Soak in water and set aside.

2.Then arrange the mangoes inside the bottle. Add 2 tsp of salt and pour enough water to cover the mangoes. It is important to submerge the mangoes with brine.

3.I used a clear food plastic and filled with water as it weighs down the mangoes. Put the lid tightly and I put the date on top of it.

I will check it after 2 weeks but will took some photo after few days. It brings back my childhood memory while doing this and that memory reminds me that I don't like that smell. It smells like a beer. But who knows, maybe after many years had passed, I can now tolerate that kind of smell if I will get a good amount of lactac acid.
