Hello everyone! this is my first post in the community. I would like to introduce you to the preparation of a delicious spinach cream.
Spinach has a high content of iron and nitrates, being green leafy vegetables are rich in folic acid, minerals, fiber and vitamins A and C.
For this reason spinach is part of my diet, and this cream is an excellent way to enjoy it accompanied by other vegetables.
Ingredients:
2 large potatoes
¼ carrot
100 grams of green peas
1 head onion
½ yellow bell pepper
2 branches of green onion
3 sprigs of cilantro
500 grams of spinach
5 grams of ground oregano
Salt to taste
2 tablespoons of sunflower oil
Preparation:
-In a very hot frying pan, put the oil and sauté over low heat for 5 minutes the onions, the paprika, the carrot and the chopped potatoes.
-Wash the spinach very well and cut it into pieces. We are going to use the whole leaf and only half the stalk.
-When the vegetables are well sautéed, add 2 cups of water. We leave it over medium heat until it comes to a boil.
-Once the water with the vegetables is boiling, add the spinach and let it boil for 5 to 10 minutes without covering the pot. Stir constantly.
-One minute before removing the pot from the heat, add the coriander, oregano and salt (I added a spoonful), so that the flavor and aroma of the spices does not evaporate and get lost.
-Remove from the heat and put in the blender, we must remove the lid in the middle to prevent the steam from generating the explosion of the jar and we can burn ourselves. Blend well until it is a homogeneous cream.
-Serve. I served it with toasted bread and a sprig of fresh parsley to add flavor and elegance.
