“Japanese Sesame Dressing- Gomadare ごまだれ” [English and Japanese]

“Japanese Sesame Dressing- Gomadare”

I love sesame very much. This is one of my favorite dressings which is called Gomadare (ごまだれ) in Japanese. Gomadare is good with simple salad, fish, meat, noodles such as soba noodles, ramen noodles, udon noodles, rice noodles, spaghetti, glass noodles, or more. I prepared lettuce, bean sprouts, tomatoes, green beans, and shrimp salad for this Gomadare sauce. It was very deep and tasty. The second day was deeper and thicker.

“ごまだれ”

わたしは胡麻が大好きです。ごまだれは好きなドレッシングのひとつです。ごまだれはシンプルにサラダ、肉、魚、そば、ラーメン、うどん、ライスヌードル、春雨などに合います。今回はレタス、もやし、トマト、豆、海老を用意しました。とても深い味でおいしかったです。2日目はさらに濃くおいしくなりました。

Ingredients

・Lettuce 10-15 leaves
・Bean sprouts 1/2 pack
・Tomato 1
・Green Beans 10-15
・Shrimp 8-10
・Tofu 1/2 pack
・Broccoli 6-10

Sesame Dressing

・Cooking sake 4-5 tablespoons
・Sugar 2-3 tablespoons
・Sesame oil 2-3 tablespoons
・Olive oil 2-3 tablespoons
・Rice vinegar 2-3 tablespoons
・Soy sauce 2-3 tablespoons
・Miso 2-3 teaspoons
・Ground ginger 10g
・Ground garlic 2 pieces
・Shichimi togarashi to taste
・Red chili pepper to taste
・Roasted sesame seeds to taste
If you like a thick taste, change the amount after tasting it. The making time is about 20 minutes including the preparation.

材料

・レタス 10〜15枚
・もやし 1/2パック
・トマト 1個
・豆 10〜15本
・海老 8〜10尾
・豆腐 1/2パック
・ブロッコリー 6〜8個

ごまだれ

・料理酒 大さじ4〜5
・砂糖 大さじ2〜3
・ごま油 大さじ2〜3
・オリーブオイル 大さじ2〜3
・酢 大さじ2〜3
・しょうゆ 大さじ2〜3
・味噌 小さじ2〜3
・すりおろししょうが 10グラム
・すりおろしにんにく 2かけ
・七味唐辛子 少々
・鷹の爪 少々
・いりごま 少々

濃い味付けが好きな方は、味をみて増やしてください。調理時間は準備時間を含めて約20分。

  1. Wash lettuce and bean sprouts, dry them.
  2. Boil broccoli, drain, wash with cold water.
  3. Cut tomatoes into edible sizes.
  4. Put them in a salad bowl.

1、レタスともやしを洗って水を切っておく。
2、ブロッコリーを茹でて、湯ぎりして、水で洗っておく。
3、トマトを食べやすいサイズに切っておく。
4、サラダボールに盛り付ける。

  1. Boil beans, drain, and wash them with cold water.
  2. Cut tofu into edible sizes.
  3. Boil shrimp, drain, wash with cold water.
  4. Put in the salad bowl.

1、豆を茹でて、湯ぎりし、水で洗っておく。
2、豆腐を食べやすいサイズに切る。
3、海老を茹でて、湯ぎりし、水で洗う。
4、サラダボールに盛りつける。

  1. Add cooking sake and sugar into a small bowl.
  2. Put it in a microwave for a minute to melt the sugar and allow the alcohol to evaporate.

1、料理酒とさとうを小さなボールに入れる。
2、電子レンジに1分かけて、砂糖をとかし、酒をとばす。

  1. Add miso.
  2. Add rice vinegar.
  3. Add soy sauce.
  4. Add sesame oil.
  5. Mix well.

1、味噌を加える。
2、酢を加える。
3、しょうゆを加える。
4、ごま油をくわえる。
5、よく混ぜ合わせる。

  1. Add olive oil.
  2. Add shichimi togarashi.
  3. Add red pepper.
  4. Grind garlic.

1、オリーブオイルを加える。
2、七味を加える。
3、鷹の爪を加える。
4、にんにくをすりおろす。

  1. Grind ginger.
  2. Add roasted sesame seeds.
  3. Mix well.

1、しょうがをすりおろす。
2、いりごまを加える。
3、よく混ぜ合わせる。

I had it with salmon and rice. It was so delicious.

鮭とご飯と一緒にいただきました。とってもおいしかったです。

It had a very deep taste. It is good with noodles as well. The second day was way better!

とても深い味わいです。麺類との相性もいいです。2日目はさらにおいしいですよ!

I never made sesame dressing at home but I must try it, because I love sesame too, this recipe looks good to me I'm on diet and this recipe contains a lot of vegetables that I like!👍

Yeah, please try it sometimes. Sesame is super food! We need to eat a lot of vegetables for sure!

I love to eat big green salad sometimes like this. This dressing is good with ramen noodles like hiyashi ramen style!
