El quesillo es una variante venezolana del típico flan de huevo, es un postre que se elabora a base de huevos y leche condensada a baño de María. Sin embargo, la creatividad en la cocina nos hace querer experimentar nuevos sabores y así descubrir nuevas recetas prometedoras. Como es el caso del quesillo de auyama, de por sí, mi torta favorita lleva este vegetal, así que al enterarme de que se podía elaborar un quesillo también decidí intentarlo y el resultado como la consistencia fue espectacular.
Y como me encanta hacer tutoriales, les voy a compartir la receta y el paso a paso, para que ustedes lo hagan en casa también!
Quesillo is a Venezuelan variation of the typical flan de huevo, a dessert made with eggs and condensed milk in a bain-marie. However, creativity in the kitchen makes us want to experiment with new flavors and discover new promising recipes. As is the case of the quesillo de auyama, my favorite cake has this vegetable, so when I found out that you could also make a quesillo I decided to try it and the result as the consistency was spectacular.
And since I love making tutorials, I'm going to share the recipe and the step-by-step, so you can make it at home too!

250 gr de auyama sancochada | 250 gr of boiled pumpkin |
1 taza de leche líquida o 100 gr de leche en polvo + 1 taza de agua | 1 cup of liquid milk or 100 g of powdered milk + 1 cup of water |
6 huevos | 6 egg |
150 gr de azúcar | 150 gr of sugar |
1 cucharada de vainilla | 1 spoon of vanilla |
2 cucharadas de canela en polvo | 2 tablespoons of cinnamon powder |
100 gr de ciruelas pasas | 100 gr prunes |
Empezamos lavando y quitándole las semillas y la "tripa" a la auyama, cortándola en pedazos para luego hervirla muy bien. Cuando esté totalmente blanda y reposada, vamos a licuarla o procesarla con una taza de leche, el azúcar, la canela, la vainilla, los huevos y demás ingredientes, hasta que nos quede una mezcla homogenea y sin grumos.
Pueden sustituir el azúcar y la leche con una lata de leche condensada y 150 ml de agua extra, esto dará más consistencia al quesillo.
We start by washing and removing the seeds and "gut" from the pumpkin, cutting it into pieces and then boiling it very well. When it is completely soft and settled, we are going to blend it or process it with a cup of milk, sugar, cinnamon, vanilla, eggs and other ingredients, until we have a homogeneous mixture without lumps.
You can replace the sugar and milk with a can of condensed milk and 150 ml of extra water, this will give the cheese more consistency.
Para hacer el sirop de ciruelas que adornará nuestro quesillo, debemos llevar nuestra quesillera a fuego bajo, junto con 100 gr de azúcar, 10 ml de agua para humedecer tan solo un poco el azúcar y los 100 gr de ciruelas pasa.
Les recomiendo cortar en tajadas pequeñas las ciruelas para que se vean más bonitas en el fondo de la quesillera y al momento de voltear nuestro postre, este luzca mejor esteticamente.
Herviremos esto, hasta formar casi un caramelo, sabremos que está listo cuando al pasar la paleta en el fondo este se tarde un poco en unir. En ese momento apagamos el fuego, y mientras este sirop está aún caliente con ayuda de un guante cocina o lo que tengan a la mano, le dan vueltas al molde para regar el sirop por los bordes. Cuando se enfríe, verten la mezcla anterior y cocinan en baño de María por aproximadamente unos 90 minutos.

I recommend cutting the plums into small slices so that they look more beautiful at the bottom of the quesillera and when turning our dessert, it looks better aesthetically.
We will boil this until it almost forms a caramel. We will know that it is ready when when passing the paddle on the bottom it takes a while to come together. At that moment we turn off the heat, and while this syrup is still hot, with the help of an oven mitt or whatever you have on hand, turn the mold around to spread the syrup around the edges. When it cools, pour the previous mixture and cook in a bain-marie for approximately 90 minutes.
Sabrán que está listo cuando al insertar un cuchillo o palillo, este salga limpio. Dejen reposar y refrigeren toda la noche, antes de desmoldar.
You will know it is ready when you insert a knife or toothpick and it comes out clean. Let it rest and refrigerate overnight before unmolding.
