I've always loved braising pieces of meat that are juicy, tender, and flavorful.
If you are looking for that, this recipe is for you.
Today I share my secret to achieving it.
Stewing meat requires patience to achieve good results. One of the secrets is to cook the meat over low heat with just enough sauce for the meat fibers to hydrate and soften.
In the case of pork, I like to use cuts that have a little fat, as this will help to lubricate the tissues. However, the fat should not be abundant as it will give an oily texture to the sauce that can be unpleasant.
To make this pork in plum sauce, you need a few ingredients. It is a recipe with little culinary difficulty.
1 ounce of rum
1 tablespoon salt
3 tablespoons of plum jam
1/2 cup water
ground black pepper and garlic powder to taste
Yields 6 servings
Place the pork in a pot over high heat and sear on both sides.
Once browned, season with pepper, garlic powder, and salt.
Add rum and plum jam.
Impregnate both sides with the sauce that formed on the bottom of the pan. Add 1/2 cup of water and lower the heat. Cover and cook for 1 hour.
During cooking, you can turn the piece inside the pot to ensure even cooking of both sides of the pork.
When the cooking time has elapsed, you can turn off the cooker and let it rest in the pot for 10 minutes. This trick will help you to cut pork easily.
As you can see in the pic, the fibers of pork look soft and moist. The aroma is incredible. Best of all, the bottom of the pot formed a dark sauce with lots of flavors and a smooth texture.
This braised pork can be served with mashed potatoes or with delicious rice. The truth is that I accompanied it with some sautéed Singapore-style noodles, and I left some portions to make some delicious sandwiches 😋.
