The last of my green beans were not so pretty due to the excessive heat and cold combination we’ve been having here in Southern California. But there was no way I would let these babies go to waste specially if preparing them is super easy!Garlicky buttered green beans with parmigiano for breakfast it was!
I washed and took off the ends on about 2 pounds of green beans. To my pan I added 4 tablespoons unsalted butter, 2 tablespoons diced garlic and 1 tbsp extra virgin olive oil.
Over a medium low flame I let the butter melt and the garlic become fragrant and to this I added my green beans, stirring constantly over a medium flame until they were shiny and hot and delicious smelling! I added 1/4 of a cup of grated parmigiano and crushed garlic and sea salt to taste. Take care not to overcook them, no one likes soggy green beans!
When they are done and are ready to be served, grate some fresh lemon zest over them. We had ours with fried eggs fresh from our hens. Delicious!
Sometimes simple meals like this are the best!
