Sometimes we just think something is too small, or trivial to share. But for most other people, that something just makes them happy. That's why I love meeting new people. Chatting with new people can indirectly make me understand what makes people happy.
A heart that can feel the suffering of others as well as happiness is a blessing in my opinion. Mixing with random people makes me read at a glance what their suffering is. In fact, from their eyes, I felt like I could tell what they were feeling. This sounds weird. But the longer it is the more real it is.
Like the taste is about this morning. I went to the morning market. Market conditions are increasingly crowded. The big Islamic holiday will arrive next week. People started shopping for the needs of the big day. I feel a lot of worries. There are many people who worry about not being able to share the gifts on our big day.
Well, I went to the market this morning to buy some potatoes. I'm planning to share the iftar menu for my growing nephews. Nephew of my biological brother, and nephew of my brother-in-law.
I'm going to make Baby Potato Lollipops. A snack that looks simple, but is super easy to eat as quick bites while we do iftar together. So, serving this snack is suitable as a dish when gathering with family or friends.
At first glance, Baby Potato Lollipops may look like cake pops, but they are not. I'm so excited that I came up with this adorable idea for serving baby potatoes. I hope you guys can also recook my ideas one day. And, let me know if you recook my recipe.
The Ingredients
- 300 grams of baby potatoes
- Enough olive oil to grease baby potatoes
- 3 tablespoons of peanut butter
- 1 teaspoon chili powder
- 50 ml of coconut milk
Peeling a Baby Potato Is Super Tiring
The tiny baby potatoes size, they made were really challenging to peel. Really tiring to be honest. But so fun to do. I peel potatoes while listening to music or watching movies so it doesn't feel tiring.
Roasting Baby Potatoes.
For the roasting method, I use an air fryer, my favorite cooking tool now compared to the oven. You can use an oven as well if you guys don't have an air fryer.
Can we use another method if we don't have an oven or air fryer? For sure, we can use the deep frying method for this recipe. Just fry all the baby potatoes then dip them into peanut sauce.
After peeling baby potatoes, dry them after washing. Then brush with olive oil. Sprinkle them with salt as well.
Arrange them in an air fryer basket or baking tray if you are using the oven. Try not to have the baby potatoes overlapping one another for even cooking.
I roast them for 15 minutes per side. Then I flip them over and roast them for another 15 minutes. If they were skinless, they would look wrinkled after they were finished roasting. But if with the skin, their taste will be strange and children will not like it. So I chose to roast them by peeling them first.
Making The Peanut Butter Sauce.
I made peanut butter sauce while waiting for the baby potatoes to cook. Here I use coconut milk and chili powder. In my opinion, the addition of chili powder doesn't taste spicy, it's just a counterbalance to the taste so it's not too sweet from the peanut butter.
Mix all ingredients for the sauce in a bowl. Stir them well with an egg whisk or just use a spoon.
If you feel the sauce is too thick, you can add more plant-based milk. But on the other hand, if it's too runny, you can add a measure of peanut butter.
Serving Time!
Serve them while warm. First, pierce them with a food skewer or ice cream sticks. I use ice cream sticks. After skewering roasted baby potatoes with ice cream sticks, then dip them into the peanut butter sauce. Sprinkle them with sesame seeds or chopped roasted nuts. Then serve them.
