Potato toast with avocado and peanut sauce.
Weekend is coming. I thought of something else for breakfast. I'm running out of bread. Finally I let my mind work. I headed to the pantry to see what groceries I had this weekend.
I have ripe avocado. Initially I thought of making avocado as a topping for toast. But since I ran out of bread I finally thought of something else. I saw that there was a supply of potatoes. Oh, I know what I want to make then.
I'm going to make toast from potatoes. Yeeap, you heard right. I'm going to make baked potatoes, shaped like toast. I use an air fryer to bake the potatoes.
For the topping I use avocado. I use two versions of toppings. The first version uses slices of avocado which are complemented by peanut sauce and sprinkled of sesame seeds. And for the second version, I crush the avocado, then I add stir-fried mushrooms.
These toast ideas are perfect for those of you who don't like the Sweet version of toast. Lets see!
Making Potato Toast
Peel potatoes. If you don't want to peel the potatoes, wash them thoroughly. Then slice the potatoes like bread.
Dry the slices of potato, then spread evenly with oil. Meanwhile, preheat the air fryer.
Put the slices of potato into the air fryer, and cook for about 30 minutes. But this depends on the type of your air fryer. There is a type of air fryer that only takes 15 minutes. So, make sure you recognize your air fryer type.
First Version
Potato Toast With Slices of Avocado
I called this first version the original version. That's because I don't need to mash the avocado. I'm just going to slice the avocado. It's just that I added peanut sauce to create a better taste.
While waiting for the cooked potatoes to be baked, it's time to prepare the dressing sauce.
Ingredients to be prepared:
- Half an avocado
- 2 tablespoons of peanut butter
- 2 tablespoons of olive oil
- 1 tablespoon of garlic powder
- 1 tablespoon of chili powder (optional just for chili powder)
- sesame seeds
How To Make It
First, make the sauce first. Mix all the ingredients for the dressing sauce. Peanut butter, olive oil, garlic powder, and chilli powder. Mix them well, then set aside.
Once the potatoes are ready to serve, it's time to add the slices of avocado on top of the potato toast.
Cut the avocado in half, then use only the other half. Peel the avocado by pulling only the outer skin with your hands. Then slice the avocados carefully to keep them in good shape.
Arrange slices of avocado on top of the potato toast. If your potato toast is smaller than mine, you can make two servings of potato toast so that half of the avocado can be used entirely.
Final step for this version, add peanut sauce, then followed by sprinkling sesame seeds.
And, potato toast with sliced avocado and peanut sauce is ready to be served.
Well, if you don't like peanut sauce as a dressing sauce, you can use another type of dressing sauce that you usually use to serve salads.
Second Version
For the second version, I added another side dish component that was already there. I'm going to add stir-fried mushrooms to this version.
If you don't have stir-fried mushrooms, you can use other vegetables as a substitute.
Ingredients to be prepared:
- Half an avocado
-lemon juice - sprinkle of salt
- pepper (optional)
- side dishes such as stir-fried mushrooms
- sesame seeds
How To Make It
First, make mashed avocado. Just using a fork. In a bowl, mix avocado, a spoonful of lemon juice, and a sprinkle of salt. Mix them well until they become mashed avocado which is smooth in texture.
Then add mashed avocado on top of a potato toast. When you're done with that, arrange the stir-fried mushrooms on top of the mashed avocado.
Then the final step, sprinkle it with sesame seeds. Then, be ready to serve!
That was potato toast with two versions that I made for breakfast on the weekends. By the way, you can also use sweet potatoes if you like a sweeter taste than using potatoes as toast. So, which version do you like more?
