It’s granadilla season here at home so I managed to get 2 big bags of Granadillas or Passion Fruit to those who prefer the name.
I’ve just planted my own granadilla bush but I guess I’ll have to wait a season for it to grow and start producing its own fruit.
For now I am reliant on buying or collecting from a friend who’s tree is producing mad amounts of fruit.
Here’s how to make Granadilla & Lemon Cordial…
Granadilla & Lemon Cordial
Ingredients
Granadilla pulp
Castor sugar
Lemon juice
Water
You need equal parts of each of the above ingredients.
I got 2 cups of Granadilla pulp from my fruit so I then used 2 cups of each of the other ingredients to make the cordial.
Method
Cut fruit in half and scoop the pulp into a measuring jug. I got 500ml or 2 cups from my pile of Granadillas.
In a medium size deep pot, add the water, lemon juice and castor sugar. Allow the sugar to dissolve completely on a medium heat and then boil on a low boil for 5 minutes.
Add the Granadilla pulp to the pot and boil for a further 5 minutes.
Strain the syrup into a large enough bowl (my mixing bowl has a pouring spout which is very useful for cordial)
Set the seeds aside.
Pour the hot cordial into sterilised jars. I reused old clean chutney bottles and bought new lids.
Add 2 teaspoons of the seeds back into the bottles for decoration and then seal tightly with your new lids.
Allow to cool to room temperature.
At this point you can refrigerate and use immediately or keep in the cupboard unopened.
I haven’t yet figured out how long I can keep them unopened so I’ll let you know when I do!
My batch made 3 ½ bottles of cordial.
I enjoyed my cordial this evening in sparkling water and it was super refreshing.
