Cooking by Candlelight: Thai Curry & Rice

South Africa is once again experiencing loadshedding which means our electricity is cut for two and half hours at a time across a schedule depending on the needs of the grid. Unfortunately ours has fallen at dinner time for two days in a row making planning our cooking a little tricky. I got home a little late and didn’t manage to get the chicken in the oven on time so I had to make another plan.

I quickly cooked rice in my microwave before the power went out and left it aside for a while and quickly got the butternut cubes to steam in the microwave shortly before the power went off. Meanwhile, I defrosted some deboned chicken breasts in warm water for 30 minutes.

Thank the Lord we installed a gas stove in November last year, due to the loadshedding that was taking place at that time as well.

INGREDIENTS
500g chicken breasts - deboned
1 can green beans in brine
400g diced butternut or pumpkin
2 cups rice
1 can Thai Red Curry sauce

I chopped the chicken into cubes and gave it a quick fry in some olive oil.

Added the drained green beans to the pot.

Added the Thai red curry sauce and allowed it to simmer for 10 minutes.

Add the pre-steamed Butternut to the pot and simmer for a couple more minutes.

The sun a had dropped just as I had started cooking the chicken so out came the candles. The nights have been dark with only a sliver of moonlight.

I dished up very simply into wide bowls, rice first and then the Thai Red curry.

Just a small sprinkle of salt finished this delicious meal.

Now for some predownloaded Netflix on my phone. Hopefully the battery will last until the power comes back on.

Hi there! Ya it’s almost expected these days. We don’t get surprised when it happens anymore. Most people have backup batteries for Wi-Fi and laptops and gas stoves to cook, and candles all over the place. But it’s fine, it’s our normal. I’m just glad it’s summer and we can enjoy the sunshine 😃
