FOODIE - Making my own home grown, home made Chutney!

Good day everyone! Zak Ludick here from Cape Town, South Africa! I wanted to share with you my experience in making some home made purslane and spekboom chutney!

I was pulling purslane out from between my basil and tomatoes when @fermentedphil notified me that these things are edible! Since then, he posted his Spekboom and Purslane Chutney Recipe and I needed to try this for myself and learn this skill!

So myself and @aimeludick did the processing for the Purslane here. And @merenludick and I processed the spekboom.

I stuck all these picked out leaves into the fridge in containers, ready for me to have time to make some chutney!

Let's get into it!

Ingredients

  • Sugar
  • Vinegar
  • Purslane
  • Spekboom
  • Onion
  • Garlic
  • Chillies
  • Ginger
  • (Apple - nearly forgot about this one!)

So now you chop up the onion, garlic and ginger and stick that in the pan with a bit of oil and brown it!

Chop up the chillies. I kept a basin of hot soapy water because I do not really enjoy getting this stuff into my eyes!

The chillies were added at the same time as the greens, which was chopped and diced as a mass over and over by myself and @merenludick.

It is good to get the kids involved in the kitchen so they can learn all about making food and kitchen safety!

More chopping! We were making chutney with quite a bit of produce. There is still plenty of this stuff in the garden!

Here is the onions, garlic and ginger browning.

Now we add the greens, the chillies, the vinegar and the sugar!

1/3 - Content (Greens, onions, etc)
1/3 - Sugar
1/3 - Vinegar

Bring that to a boil!

I might have boiled it a bit long this time. I rememberd to pour this off while it was warm and liquid because mine solidified fairly hard. It turned out quite dark and solid. Next time I will not boil for quite so long.

Here it is in a mayonnaise jar. The thickness was solved by adding a little water and heat and letting rest again before serving.

This past weekend I went with @jasperdick and @clairemobey (Mobey-Dick) to support them at the Cottage Club for a live performance. Since I totally have the 😍 for Claire.

And a sample of the chutney went with us!

There we go. It went really well with these cheese sausages!

As well as Lays chips (crisps)! At the end of the day, I brought far too little and a lot of people took a taste of the chutney. It was a crowd favourite and there were people asking me for my number so they can get more chutney from me!

If I had brought some smaller bottles to the event, I would have probably ended up selling the stuff!

This was a great experience and I was very proud of the results! I need more glass containers so I can make more of this stuff while I have so much purslane growing in the garden.

I have no idea what the shelflife is of this chutney, perhaps @fermentidphil can tell us? I would assume fairly long because of the vinegar?

Despite what you may think we don't put the children "in" the food 😂😂😂😂😂😂😂 as tasty as that may seem. That being said, @zakludick what if I use your chutney to baste the GAMMON!!! OMG!!!

It's cool when they like to help in the kitchen, my son also likes to prepare food, even by himself for us :)

If you pot hot in sterilised jars and seal, it will have an almost infinite shelf life. That said? Even open bottles keep for months because, as you say, of the vinegar. Also best, flavourwise, at room temperature and not straight from the fridge. Also, flavours develop over a week or two. I must give this recipe a go...

Spekboom in chutney! I'd never have thought of that, but having the natural tartness, I can imagine it's perfect for chutney!
It should have a long shelf life with the sugar and vinegar.
Enjoy! Wish I had enough spekboom in my garden, need to plant more.

That looks amazing ! It makes me wonder what other plants we think of as "weeds" are actually really nutritious and edible. It would definitely be a regional thing.

Indeed! It IS a regional thing! Apparently its a thing where the food producers do not want people to know how prolific and useful these plants are!

Had no idea spekboom was edible! It is growing all over the place here. Will have to try this soon.
