Fresh cookies in oven with that warm cinnamon are just scrumptious smelling. They seem to be disappearing fast around the house, highly recommended. Here's the recipe...
Ingredients
(in order of addition)
1 cup Brown Sugar
1/4 cup White Sugar
1 cup Butter (room temp.)
2 eggs (room temp.)
1 Tbs Vanilla
1 Tbs Molasses
1 1/2 cups Flour
1/2 tsp Salt
1 tsp Baking Soda
1 1/2 tsp Cinnamon
3 cups Oats
1 cup Raisins
- Make sure the butter and eggs are at room temperature
- Pre soak the raison for 30mins in some water to keep your cookies soft and chewy
Cream together sugars and butter till it gets fluffy. 2 mins, medium speed. Crack in eggs, mix just till blended together.
Add vanilla and molasses.
Mix together flour, baking soda, salt, and cinnamon in a bowl separately. Add dry mix into wet, giving it a quick mix. Next add the oats by hand.
Strain out the raisons, dry dab with a paper towel. Mix in by hand.
Chill the dough now for 30-50 minutes.
Preheat oven to 350.
The dough will be slightly sticky and gooey.
- Chilling helps form into tablespoon size dollops.
Bake for 12-14 minutes. Leaving to cool on the pan for another 5mins before transferring to a cooling rack.
- The centers will look slightly under done when taken from the oven.
- I decided to add some chocolate chips to the 2nd dozen. You can also add walnuts. I think I threw in about a 1/2 cup. Who doesn't like chocolate?
