This morning I feel good, so I wanted to make a Khmer dessert for my family, and I wanted share with five friends that live around our apartment. When they eat it already, they said it’s so delicious, and that made me so happy today. This rice cake in my country is made with 3 different recipes.
Steamed rice cakes with coconut milk and eat with fresh young coconut meat, steamed rice cakes with coconut cream, and steamed rice cakes with palm fruits. Some people like to use food coloring in them. Of the three recipes, the most popular is steamed rice cakes with palm fruit, and for this recipe we do not use yeast. We do it traditionally from the old peoples or our parents. In my country we call it "Num Akor".

Ingredients For Dough
- 3 cups rice flour
- 1/2 cup tapioca starch
- 1 cup brown sugar or taste
- 1 tsp salt
- 1 tbsp yeast + 1 cup warm water & 2 tbsp sugar
- 1 coconut = 3 cups coconut milk with water
- crushed roasted sesame seeds as you like
I used coconut milk made by myself, so I scrape the coconut and grind the meat with water, then squeeze it and keep only coconut milk. I did it two times and I got 3 cups of coconut milk.
Put yeast and sugar in warm water and stir it a little bit. Keep it around 10 minutes. Then take a big bowl put rice flour, sugar, salt stir it and pour coconut milk, yeast-sugar-water, and stir it until dissolved.
Then cover it and put it in warm weather 1 hour to two hours. After an hour or more the the dough rises, so stir it a little bit before take it to steam.
Steam it 10 minutes. If you do not have like me for steam. You can steam it in a small bowl.
While we wait 10 minutes I made coconut cream for put on the top of rice cakes.
- 1 1/2 cups coconut milk
- 2 tbsp brown sugar
- 2 tbsp tapioca starch
- 1/8 tsp salt
Put all ingredients in a bowl and stir it until dissolve.
After 10 minutes.
Then put coconut cream as you like, or just look at it and decide, and steam it 5 minutes more.
After 5 minutes take it from the steaming pot and keep it until little bit cool, then we can easily remove it. First, take a small knife, press the knife under the cake and remove it.
Finally add crush roasted sesame seeds on the top.
