Dry fish curry is one of the authentic Bangladeshi dishes. It's spicy, has a distinct flavor, and goes best with steamed rice. Usually, we cook this once a week or at least often.
A few days ago I tried the 'Dry Loitta fish' with tomatoes. It came out so well, I can still feel the taste!

Let me share the step-by-step process.
What do we need in our kitchen?
- Dry Loitta fish 250gm
- Onion 50gm
- Garlic 25gm
- Green cilli according to your taste
- 2 Tomatoes
- Coriander
- Turmeric powder
- Red chili powder
- Cumin
- Salt
- Cooking oil
First, we need to cut off the fins and the heads of the dry Loitta fish. Then wash them with lukewarm water a few times until it doesn't stink.
This is how the fish would look after washing. Cut the fish into pieces and keep them aside.
Add other onion and green chili to the pan and cook it until golden brown. Add some cumin and fry for another minute. I cooked the dish on my favorite old pan.
Add the pieces of the fish and cook for a minute.
Now we need to add turmeric, red chili powder, and salt to the fish. Put a lid on and cook for a few minutes.
When the fish becomes soft then add the tomato slices. No need to add extra water. Cook it in low heat for another few minutes.
Put some coriander before turning off the heat and the curry is ready.
Serve it with hot steamed rice.
The curry is full of flavors. Dry fish usually has a distinct flavor and adding all the onion, garlic, and spices makes it much more flavourful.
I know it looks very spicy but don't worry. If you are not a spice lover then keep it low.
