Today I make Italian Wraps :)
I really like wraps because there are so many variations and you can always come up with something new. For my Italian version, I make a fresh rucola pesto. You could of course also use basil pesto, but with rucola it gets a great spice and is something different.
Ingredients for the Rucola Pesto:
- Rucola
- Grated Cheese (parmesan, peccorino or cheddar)
- Nuts
- Olive Oil
- Salt and Pepper
- Garlic
First I chop the nuts into small pieces. You can use pine nuts, for example. But I don't have any at home, so I use a mix of cashews, sunflower seeds and pistachios.
Then I put all the ingredients in a tall bowl and blend with a hand blender to make a creamy pesto. I season it with salt and pepper and add a little sugar for a rounded taste.
And voila...the pesto is ready:
For the Italian wraps, I use ready-made tomato-flavoured tortilla patties, the pesto, rucola, tomatoes, mozzarella and some creme fraiche with herbs.
Now it's time to roll the wrap. I heat them briefly and then spread them with the crème fraîche and pesto. Then I top them with the rocket, tomatoes and mozzarella and season again with a little sea salt. I fold the bottom end over first, then the two sides.
The wrap tastes really light and fresh and is perfect for a nice summer's day.
