Hi dear friends, I made a moong dal dessert with coconut and tapioca dessert for my family and for the @LotusShares Plant Power Cooking Challenge | Week #3. This is an easy recipe from simple ingredients which are easy to find anywhere. Our family likes to this a lot.
I know this recipe is not normal for some countries. Many countries like to make beans for meals, but in my country (Cambodia) we like to use beans in desserts and cakes.
π©βπ³ Moong Dal Dessert With Coconut & Tapioca π₯₯

Ingredients
- 1 cup moong dal, whole
- 2 cups coconut milk, or as you like
- 1/2 cup tapioca pearls
- 3/4 cup palm/cane sugar, or to taste
- 1/2 tsp salt or taste
- 5 cups water
Soak tapioca pearls in water until soft. Wash moong dal four to five times.
After that boil them with 1 1/2 cups of water until cooked.
After moong dal are cooked, I add the rest of the water and wait until it boils, then add tapioca pearls and stir it. After that I add cane sugar, salt, and coconut milk, then I stir it again.
Boil it one or two minutes and taste, itβs ready.
