Few months back hubby bought beans flour from one of his colleagues at work. He thought we should try it and if it will make sense then we can be patronizing the vendor since we do bean cake a lot.
I like the idea of bean flour, it makes my cooking faster and easier. It saves me the time of soaking the beans and frequent grinding.
I tried the one he bought, but I was a bit disappointed because a little bit of fine sand was found while I was eating the bean cake so I thought why can't I try to prepare this myself so that I can make sure it will be sand free.
Some weeks ago, I took about nine cups of bean, soaked it for about two minutes then proceeded to remove the shaft with my hands by peeling it against both hands.
When I notice that the back has been peeled to some extent, I will add water , then use the water to filter out the shaft.
By the time I was done, the above is the result of the beans well filtered, note that I picked out the stones before soaking the beans to avoid my flour having sand like the one we bought.
After that I proceed to drain the water then put the beans on a hot sun. Here I was very careful and kept a watching eye on it so that the breeze wouldn't introduce sand to it.
I was lucky the sun was very hot that day and it dried up within seven hours.
I took it to a mill grinder nearby and it was grinder within some minutes for just 100 naira. I bought the beans for 700 naira and that made the whole cost to be 800 naira which is $1.09.
The one hubby bought was $1.4 and it was like half of the one I did above. Aside from being cheaper, there was no sand in the one I made and the bean cake was a bit floppy compared to the one we bought. It is likely theirs weren't dried in one day or the beans were over soaked in the water. Hence the cake wasn't floppy at all.
Uses and preparation
I took five tablespoons and added hot water to get below.
Somehow I forgot to take the shot of where I added, my onions, pepper and seasoning.
Put cooking oil on the fry pan, and allow it to heat then start putting the liquid beans bit by bit.
Wait till it starts turning Brown, then turn it. Allow the other side to get brown and your bean cake is ready within ten minutes.
I like taking my bean cake with pap accompanied with milk. And it make a great breakfast.
Aside from using this bean flour for bean cake it can be used for moi-moi, or used for bean soup, all are Nigerian delicacies.
advantage of this to using fresh soak beans
It saves more time, and is convenient to use. And also cheaper compared to buying from bean flour vendors.
Disadvantage
The only disadvantage I noticed is that the bean cake prepared from beans flour is not as floppy as the one prepared from soak beans. But only when you pay attention alternatively can you tell the difference.
Last take
Ever since I tried this out and I love the outcome, I have added bean flour into our house table foods and it has been one smart move, it is cheaper, and saves me a lot of time and energy.
