Today is a day perfect to make a light and carb-free meal. To tell the truth, this type of food is delicious and easy to digest. Today I will cook cabbage rolls, a recipe made with few ingredients and in simple steps.
Everyone has a particular way of deciding. Many times it is done on a craving, and other times by looking at the ingredients we have on hand.
When I opened the freezer, I saw I had some ground beef and thought it would be good to make some hamburgers. Then I thought about a meal that was moister, with some sauce. Maybe make pasta with bolognese sauce, but I wanted something without carbs, so I remembered I had some cabbage, and inspired by Lebanese dolmeh, I made this delicious meal.
1 pound ground beef
1 medium onion
2 cups tomato sauce
3 tablespoons vegetable oil
1 bay leaf
1 teaspoon garlic powder
a pinch of dried oregano
salt, and pepper to taste
Wooden chopsticks
Yields 4 servings
To make these cabbage rolls, we must look for a firm cabbage with leaves in good condition.
Cut the cabbage at the stem end and remove the leaves.
Cabbage is a vegetable that contains some sulfur molecules. It is not harmful. They are molecules present in other foods such as onions, broccoli, and radish. However, for people who suffer from gas, it is not so good because they contribute to distending the abdomen.
To minimize the effect of cabbage to produce gas in the colon we must poach it.
Put to boil water in a pot with a teaspoon of salt. As soon as it comes to a boil add the cabbage leaves one by one for only 3 minutes. After this time, remove them and let them drain.
This step will make the cabbage leaves more flexible, making it easier to stuff them.
To make the filling, place the oil in a frying pan and add the ground beef.
Previously dice the onion and add it to the meat when it turns brown. Season to taste with salt and pepper, turn off and set aside.
Take a cabbage leaf and place two tablespoons of the meat filling in the center.
Carefully fold the outer edges towards the filling and roll up from the thickest part of the sheet.
Pierce the cabbage leaves with a pair of wooden chopsticks to keep the cabbage rolls firm (don't forget to remove the chopsticks at serving time).
Place the tomato sauce in a pot. Season it with garlic powder, oregano leaves, salt, pepper, and bay leaf. Cook over medium heat for 5 minutes.
Place the cabbage rolls one by one in the sauce. Cover and cook for 10 minutes over low heat. It is enough time for the cabbage leaves to cook and absorb the flavor of the filling and sauce.
When serving, remember to remove the wooden chopsticks. You can eat these rolls without garnish, or for those who cannot resist the complete absence of carbohydrates, you can put a couple of spoonfuls of cooked rice on the plate.
