Dinner this time is a menu that I did not expect before. What I didn't expect here is that I really didn't expect that I would be making a dinner meal out of pea ingredients.
Actually, the peas that I used this time are not the pea seeds that you usually see. Here the pea seeds that I use are from the type of snow peas that are usually cooked with the skin, not just the pea seeds.
Pea curry was an accident I had to do. It started with my surprise when I saw the snow peas had changed shape as if they looked older than when I first bought the snow peas.
I often buy snow peas to use as stir-fried with some of the veggies or for clear soup dishes. Usually snow peas that are delicious to cook are snow peas that have thin skin and are still green in color. I also keep them in the fridge.
Unfortunately this time, the snow peas looked no longer fresh and had become older. This makes snow peas unfit for cooking. Some parts of the skin become fibrous, so hard to eat.
I was a bit sad then. I've never missed a chance to cook vegetables because of their altered age, even if they've been in the refrigerator. But as a chef in my family, I always try to minimize wasting the ingredients I buy. I have to think hard about how to process food ingredients that are no longer fresh into delicious food. Luckily, this time I got the idea to serve snow peas that were no longer fresh into a delicious dish for dinner.
This is the first time I will cook peas. Even for the type of green peas that are cooked in general, I have never cooked it because it is not something that is familiar in my area. I hope things will turn out great!
Separate the Outer Skin and Peas
I have to make the extra effort to make food this time. It is always an extra effort when we process something that is no longer fresh. Also, we need a lot of tricks.
For the trick this time I will separate the skin of the snow peas and the peas. Storage in the refrigerator makes the snow pea pods bigger than the snow peas which are generally consumed when they are younger. The increase in peas size turned out to be an advantage for me. I can explore peas to be the dominant flavor in a dish.
First of all, carefully open the skin of the snow peas. This is to avoid us squeezing the peas that are on the inside. Textured peas are very easy to crack in this condition. So, we really have to be careful when we want to take the pea seeds from the snow peas.
After successfully separating the outer skin from the peas, don't throw away the snow pea's skin.
I will use the skin as one of the ingredients for making vegetable broth next time. Or if you don't want to make vegetable broth with the skins, you can use the skins as a mixed ingredient to make compost later, along with organic ingredients from your kitchen, of course.
This time I managed to get 1/2 cup of peas. So I will combine it with potato to satisfy pea curry lovers. Then I Will serve them with cauliflower too.
Roasted Cauliflower
In the dish for dinner, this time I used roasted cauliflower as a compliment. To save time, I process the cauliflower first, after I've separated the snow peas skins and seeds.
Before roasting the cauliflower, I blanch the cauliflower for a few minutes.
First wash the cauliflower and separate it from the hardest stem, taking only the flower part. Divide the two cauliflowers then bring the water to a boil.
Blanch cauliflower in salt water for about 3 minutes.
After blanching, set aside the cauliflower and preheat the oven or air fryer.
Grease the cauliflower with olive oil, and sprinkle with a little salt.
Roast cauliflower until tender. Here, I use an air fryer for 15 minutes.
Pea Curry With Potatoes
I chose to use potatoes in this pea curry dish this time. The use of potatoes also serves as an ingredient that will fill us up.
The Ingredients
- A big potato
- 1/2 cup of peas
- 1 cup of coconut milk, use thick texture
- 1 cup of water
- half an onion, thinly sliced
- salt to taste
Herbs and spices
- 3 cloves of garlic, thinly sliced
- 3 cloves of cloves
- 1 stalk of cinnamon
- 3 cloves of star anise
- 1 teaspoon of turmeric powder
- Pepper powder to taste (optional)
How To Make Pea Curry
Heat the oil. Then stir-fry slices of garlic, then followed by slices of onion. Keep stirring them until they smell good.
After the garlic and onions become fragrant, add the spices, then stir well until the garlic and onions are well caramelized.
Add coconut milk. Also, add water. Bring them to a simmer. Add about half a tablespoon of salt or according to your taste. Taste correction. Do this before the gravy thickens so you can add more salt if it doesn't taste right on your tongue.
Add potatoes. I used a wide piece that was big, but thin so it softened quickly. Wide potato sides are also useful for plating as a base for peas.
Cook until the potatoes are cooked. Then add peas. Stir for a moment. Wait a moment then turn off the fire.
Breadcrumbs
Here I added toast to create crispy texture. So all texture are completely perfect!
First, I cut bread to cubes.
I use airfryer to roast bread for about 15 minutes.
Serve pea curry with roasted cauliflower while warm. As the pea curry cools, it will become thicker in texture. Add breadcrumbs if you want.
This is my first time cooking. In my area, green peas are not easy to find. Usually, green peas are sold in the form of canned products. Well, this time I got the peas from snow peas that were getting old in the fridge, and the seeds also got bigger by themselves.
Luckily, the taste of the peas that I made the curry dish together about this time is delicious! Spices such as curry ingredients really help the final taste of this dish to be better and better.
