Who could have guessed that a simple person could create such a captivating big character? As well as simple food that has its own authentic impression. Food should not be labeled as luxury or not. That is completely unfair to people who have to struggle to support their families.
From simple things, we actually learn to manage our emotions, to be wise and look down-to-earth, to keep a low profile, even though we can be more than that.
Well, today I'm feeling annoyed. To be honest while making dinner, I was still thinking about what people said about my house.
Preparing the tofu, I was actually trying to quell my anger. Some of my neighbors like to enter the house to greet me even though I haven't asked them to enter. That's very impolite. What pissed me off even more was that they were commenting on how I should renovate my house! WTF!
I sat in front of the living room window of my simple house. I have set up this space for content creation. I really don't understand why my neighbors like to comment on other people's houses.
Since the past, I really don't want to over budget for home renovations. Because I'm saving to buy a new house. This is my late mom's house and I feel angry when people comment on my house. If I want to be harsh, I want to say that they are poorer than me. They are just happy to throw money to build a house but they let their children not go to good schools! I'm proud that my late parents can make me graduate to bachelor's degree even though we have a bad house. But in fact, I just held back my anger and let them insult me. I don't know. So I let myself get busy cooking to forget those useless people talking.
I'm going to make dinner Meals with tofu ingredients with some of spices and herbs, also with roasted sweet potatoes, stir-fried broccoli, cucumber, and almonds.
Tofu Rice
We can call it scrambled tofu, or tofu rice. I think the mention depends on the portion served. This time I made the biggest portion of tofu for dinner. So, I call that menu with tofu rice.
The Ingredients
- 4 blocks of tofu
For seasoning
- 2 tablespoons chopped onion and garlic
- flattened ginger
- 3 kaffir lime leaves or any fragnant herb you have.
- 1/2 teaspoon salt
- 1/2 teaspoon coriander
- 1 teaspoon of turmeric powder
Preparing Tofu
I feel like I'm the tofu queen. Eheheh. I've always liked serving tofu in lieu of tofu. There are always different forms of tofu dishes that can be made.
This time I'm going to turn the tofu into a scrambled egg-like texture. Changing the texture of the tofu is a satisfying thing. I felt as though I could suppress my emotions by interacting with the surrounding things in the kitchen.
I use a manual chopper. I have to turn the chopper handle which is located at the top of the chopper to make the chopper blade work for chopping tofu.
The next step is stir-fry scrambled tofu. FYI, I also often use the roast tofu technique for the crispy version. But, with the roasted version, I can't add spices and herbs like the stir-fry version.
Start heating a few tablespoons of oil. Then add chopped onion, and kaffir lime leaves. Keep stirring until they smell good.
Add scrambled tofu, coriander powder, turmeric powder, ground pepper, and salt. Stir everything thoroughly.
Cook for about five minutes or until the texture of the tofu is slightly dry. Correct the taste before removing and set aside.
Roasted Sweet Potatoes
Sometimes I use potatoes as a source of carbohydrates. Sometimes also sweet potatoes. I often swap them so that the diet menu doesn't become boring.
In this dinner dish, I used sweet potatoes. I only used one sweet potato and it was enough for two people. Enough filling, don't worry.
After peeling the sweet potato, I cut it into small cubes. Apart from small cubes, you can also form sweet potatoes into wedges or like toast if you have large sweet potatoes.
Mix small cubes of sweet potato with olive oil and salt. Then, roast for about 15-20 minutes per session. Flip over them then roast again for about 10-15 minutes.
Stir-Fried Broccoli
For the veggies, I use stir-fried broccoli. I chose broccoli for the color contrast of the whole dish to make them look more appealing. You can also use other types of vegetables that you like.
For seasoning, I only use garlic and onion seasoning. As always, keep them simple to make all the dishes come together with a good taste and don't collide with each other.
Initially, stir-fry chopped onion and garlic, then add broccoli. You can add soy sauce or mushroom sauce as well.
Serving Time!
My anger began to subside. Oh, thanks cooking! I should have known from the start that I didn't have to care what toxic people said. But I'm just an ordinary human who has emotions. Glad I got through it just fine.
I arrange all the dishes that have been cooked. I also added crunchy zucchini chunks for a fresh and healthy crunchy texture (I'm avoiding oil-heavy crackers this time).
The results are pretty good! I'm glad everything didn't get messy even though I was cooking while thinking about a lot of things that made me want to get angry!
