Take out a supply of different colored vegetables from the refrigerator. My feeling in the morning is quite calm. It's not that I don't have problems as a human being. But I always try to stay calm and get used to doing everything without panicking.
I have several types of my favorite vegetables and also tofu. That's enough to give me and my family the energy to start the day.
From the kitchen window, I peeked out there. My husband is sweeping the house. I smiled and was even more excited to make breakfast.
My heart was filled with gratitude while chopping vegetables. I have a husband who doesn't just give me comfort. But he always does the work that many husbands in my area don't want to do.
My husband is never shy about cleaning the house, washing dishes, and washing clothes. He didn't want his hands to be idle while he was off from work. He just wanted to make sure I cooked him a good meal.
One more thing, I am very grateful to have a husband who has the same taste as me. I can't imagine what it would be like if I lived with someone who couldn't even swallow green leaves for breakfast or even on a difficult night when we had limited food sources one day.
So, this time I will serve colorful vegetables with crispy fried tofu. To make our day cheerful. Just be grateful and start to make your day full of fresh and crunchy veggies.
The Ingredients
- 100 grams of tofu
- 150 grams of edamame or you can replace with peas.
- 1 handful of green beans
- 1 carrot
- 1 small head of cauliflower
- 1 stalk of spring onion, sliced
- 3 cloves of garlic, sliced
- 5 small cloves of red onion, sliced
- enough all purpose-flour to fry tofu
- 1/2 tablespoon of salt
- 1/2 tablespoon of ground pepper
Cooking Instructions
BOIL EDAMAME
First, bring the water to a boil. Then, toss in the edamame with a pinch of salt. Boil them for about 5 minutes.
REMOVE PEAS
After cooked edamame are boiled, let them cool in ice water. Or just use cold water in general to cool them down. Then, remove the peas from the edamame pods. Set them aside.
STIF-FRY SEASONING
Preheat the cooking oil. Then add garlic and onions. Stirring them until they have a delicious aroma.
ADD VEGGIES
Add green beans, carrots, and cauliflower. Stir-fry them for a while. Then, add a little water to bring them to maturity. Cook them for about 5 minutes or according to your preference of vegetable texture.
ADD BOILED EDAMAME / PEAS
After the vegetables are cooked, then add the boiled edamame and spring onion. Don't forget to add salt and pepper powder.
You can add chili powder or even your favorite sauce to create a better taste. just keep stirring them in a while.
CUT TOFU INTO PIECES
Switching to tofu, cut the tofu into fry-able shapes.
MAKE THE TOFU BATTER
Prepare all-purpose flour and water. Add water little by little to the all-purpose flour to make a good batter. Then, add the tofu.
FRY TOFU
Preheat cooking oil. Fry the tofu until they turn golden brown on both sides.
SERVE ALL DISHES
Everything has finished cooking. Then, serve them all at once on serving plates or serving bowls.
You can add potatoes or warm rice as a complement if you feel you need more energy.
I serve those dishes using small bowls. Coincidentally, today my husband is not working. So, I deliberately don't add rice or potatoes for breakfast to avoid excessive carbs in the morning.
Grateful for the things we have. For a colorful vegetable dish that we can enjoy among the many people out there who only eat one loaf of bread a day.
