Veganuary: Improving My Vegan Sushi Making Skill / 美しい菜食太巻への道

This month I will be vegan for a month, as part of my Veganuary challenge. I am reading more vegan cookbooks than ever, not just don't eat animal products. I want to improve my vegan cooking and baking skills.

One book in particular, a Japanese vegan cook book "Vegan Life in Paris" is very good, with many recipes I want to try, beautiful photos, and inspiring text. I flip through it many times already in between work.

A photo of Futomaki rolls caught my eyes. Futomaki is a variety of sushi rolls. I like it and make it both at home and for catering. I have served vegan Sushi rolls at a local market quite for a while. I think mine was good enough and people liked it but ... the cross section of the Sushi in the book is incomparably more beautiful.

The photo below is what I made for New Year's day. It's not bad, but how can I say that, but the edge of ingredients were too sharp or to say not smooth.

When I read and compared the recipe in detail to see what the difference is, I found the key is that the ingredients are cut finer. I used to cut cucumbers and other ingredients thick so that I could roll them well. I have never thought about cutting cucumbers thin!

I decided to make one for dinner to give it a try. I cut everything into thin strips except for the tempeh and turnip leaves, which I used as the core.

After rolling it up, I let it sit in the bamboo mat for a while ...

Yeah, good! It is getting better! I think it is easier to cut it than before because the finely cut ingredients fit together well, so they do not fall apart. I think in regular Sushi rolls with fish, the elasticity or gummy texture of fish makes the ingredients fit together well, but the vegetarian rolls are a little different.

The ingredients form nicely round and smooth surrounding. The colors are less vivid because I made it in a hurry today with what I had at home, but next time I think it would be perfect if I put in a more ingredients with vivid colors 😁

At the moment I don't serve Sushi as it's too cold and rice can be too hard. But I make an exception and will serve this type of Sushi at the local market next month. We have a special Japanese fest called Setsubun, on that they this type of Sushi is eaten.

今月はベガニュアリーに挑戦ということで、一ヶ月ビーガンで過ごす予定です。ただ動物性の食品を食べないと言うだけでなく、料理の腕も上げたくて、ビーガンの料理本をいつにも増して読んでいます。

中でも『パリの菜食生活』という本がとてもよく、作ってみたいレシピがたくさんあり、写真がきれいで、文章にも感銘を受け、仕事の合間に何度となくぱらぱらとめくっています。

その中に太巻きがありました。私も太巻きが好きで、マーケットでも菜食太巻きを出していて、結構自身はあったものの、断面が比べ物にならないほどきれいなのです。

私がお正月に巻いたものはこんな感じです。悪くはないけれど、なんていうのか具材が滑らかに巻かれていないのが気になります。

こちらはマーケットで出したものの写真で、同じ問題が。

何が違うのだろうとレシピを詳しく読んで見比べていると、具材を細めに切っているのがポイントな気がしてきました。今までしっかり巻けるようにきゅうりなどは太めに切っていたのですが、細めに切るのもアリなんだ!と目から鱗でした。

さっそく試してみるべく、晩ご飯に太巻きを作ることにしました。芯にするテンペとカブの葉以外は細めに切りました。

巻いた後は巻き簀の中でしばらく寝かせて落ち着けて・・・

うん、いい!よくなっています。大きな具がパズルみたいになっているわけではないので以前よりもばらけにくく切りやすい気がします。お魚を使うものだとお魚の弾力でうまく材料同士がはまるのだと思うのですが、菜食太巻きはちょっと勝手が違います。

具材がカクカク詰め込まれた感じではなく、きれいに丸くなめらかに収まっています。今日は夕方家にあるもので急いで作ったので色が地味ですが、次はもうちょっとバキッとした色合いのものを入れたら完璧なのでは・・・なんて😁

来月は節分に合わせて地元のマーケットで恵方巻を出そうと思っています。一段腕を上げて今から楽しみです。

Happy new year @lauramica! I appreciate my colleague talked about Veganuary and I got inspired from it. I am a vegetarian but to be a vegan is away different from what I thought. I will write about it in a post :)

I love this sushi roll. I would like to try making it one of these days. I hope it turns out like the authentic sushi taste.

You can be really creative when you make your own :) It's really fun. I wish you can make yours soon!
