Hello everyone, hope you are all having a good year 2023? It is my earnest prayer that God brings all your aspirations for the year to fruition.
I wish to share in this post how to process garri. Just few days ago I made some with my brothers in the house. To start with, what is garri? It is a food that is gotten from the cassava root. It is in the nature of a flour. It can be called granulated cassava. It is a food that is easily accessible to people around the West African countries like Nigeria, Ghana, Togo, etc. It can be yellow or white in collour
The yellow garri
To produce garri, the first step is to go to the farm and harvest some cassava roots or if one does not have a farm to harvest from, one can buy already harvested ones.
Then you neatly peel the body of the roots to uncover the white inner part. Then wash clean with water.
After washing, then it is taken to the place where it will be grinded.

Afterwards, the grinded cassava is poured into a sack bag and placed on another machine where it will be left to dry for about two to three days in preparation for frying.

Then it is sieved with the local sieve before it is fried. To get the yellow flour, little quantity of red oil is added to the dried substance before sieving. Afterwards it is then fried. It is fried dry and not with red or vegetable oil.
Frying the garri
After frying it is spread on a flat surface to allow it cool off before packing into a bag. And with these processes, the garri is ready for use. It can be eaten either with soup as swallow or with with sugar and groundnut or beans or coconut or even fried fish but not as swallow but as drinking garri as we commonly call it in Nigeria and 🙄. It can also be eaten just like as it is when fried. That is our African delicacy. My village people such as @onos-f, @ksam and even @maryjacy love it alot 🙄🙄 @ksam even prefer the soared type popularly known as Ijebu garri
The above descriptions are the personal methods employed in processing cassava for garri. There are other ways people use. There are even machines in recent times to do the whole processing ranging from peeling to grinding to drying, sieving and even frying. But then, all are geard towards one goal and that's production of the cassava granules known as GARRI.
