Food preservation: Making Ginamos(fish fermentation)

Good day hivers! It's been a week since I've published my last blog. I've been busy about few days before my boss arrived from the states. I went to the city to buy novena pamphlets.

Starting last week, the schedule was hectic for the preparation of things that I am tasked to. From cleaning the house to moving out some sort of stuffs. As she arrived, I became even busier driving her from here to there. She has many things to prepare also for the upcoming chapel fiesta. I always wanted to blog my daily activities but I really can't because my eyes won't cooperate during the night.

By the way, before I start this blog, I just want to express my gratitude to everyone who supported my previous blogs🫣

Today, I'm gonna share with you something that I'm used to do when I stayed at the beach. Fish preservation. There are a lot of ways to preserve fish. May it be dried, frozen, or covered with salt. They're both excellent. But for this blog, I'm gonna make ginamos (fish fermentation).

Yesterday, we went to bogo city with my boss to buy some necessities. First stop is at Super Metro to buy batteries for the candles.

My boss and her assistant went inside first because I still need to wait for parking slot. As I entered the store, I met my college friends. I've been here several times but it's my first time seeing them here. One stands by the entrance. He wears a cap, navy blue slacks with shiny black shoes and white long sleeve with a surname at the right chest. He's armed with a gun and a wooden baton.

Wait, I know what you're thinking 🤣 🤔 😝. Yes! He's a security guard there. I'm so happy to see him not because I can shoplift and sneak out easily without a trace😂 but because I saw him there. Imagine Seeing your friends for the first time after 8 long years😊. Anyway, we just exchanged hellos, chatted for a while, and bade good bye right away because I'm in a rush.

The other one is standing in front of a white-haired granny costumer grabbing some grocery items. She wears a beautiful smile, ☺️ red polo shirt and jeans. Yes, she is a senior lane cashier. I glanced at her if she noticed me but she's busy punching the items so I went ahead. One eternity later, we've got what we needed and proceed to the counter.

Since my boss is a senior citizen, we went straight to the senior counter. I was waiting that my classmate could notice me because I looked old due to my intentionally unshaved beard but she didn't. When it's our turn, I placed all the items on top of the counter. She asked for a "metro reward card" without looking at me. So I decided to play a joke and handed her a "Gaisano suki card".

She was stunned for a while when she saw a red card instead of blue. She then looked at me in confusion and smiled as she finally noticed me as a classmate. As expected, we chatted for a while and she mentioned about our planned reunion on September. I told her that I can't promise to come and join them.

Afterwards, we bade good bye and went out offering a fist bump to the guard. Next stop is at Bogo City public market. We planned to buy fruits, fish and veggies for weekly consumption. As we strolled around, there's a display of libod/bilabid fish. My boss then decided to buy some and asked me to make a ginamos (a type of fish preservation) so she has something to bring with her when she went back to the states.

Since I knew the process, I said yes. Eventually, she bought 5 kilos. Two for the house, and Three for the states. Fast-forward, we arrived home and I went ahead with my task. First of all, I washed the fish with tap water. While doing so, I noticed something that belongs to the ocean; broken corals and sea weeds. So I decided to pour it all to an aluminum tub with water so I can easily pick up the weeds and other unwanted guests 😀 😉.

I picked the fish little by little so I can easily spot the weeds and placed them on a plastic colander to drain excess water.

I also picked out the hard scaled fish because they're unfavorable to be fermented.

For the 2 kilos of fish, I planned to use 1 1/4 kilos of salt but I realized that the fish were too small so, I just added 3/4 of a kilo.

After a powerful hand mixing, here's the result. Grains of salt is visible for now but after few days, it will be dissolved and serves as a liquid preservatives.

Here's the finished product. I placed them in a plastic jar. This ratio will last about a year if not consumed.

For the 3 kilos of fish, I also added 3/4 kilo because my boss don't want it to be too salty.

I also added some spices, 10 cloves of mashed garlic and 1 medium sized ginger because she liked the aroma of spices which I won't recommend.

Mixing them by hand might be nasty but you don't have to worry. My hands are clean because I washed them last week😝😝😝

She planned to bring this with her to the states so it was packed in a zip lock bag and flattened to be frozen.

And it's ready to go😂

Ps: If you want to make this yourself, here's a tip; The more salt is added, the longer it expires.

Accept it or not, It's better to eat this kind of food if you know it's clean and safe to eat🤔😉🤔
