La receta de hoy la llamo: Panqué Aniversario Vegano (PAV).

En esta ocasión aprovecharemos las bondades deliciosas que nos brinda el cacao en polvo y elaboraremos un rico panqué que rellenaremos de una sabrosa y apreciada crema de parchita (maracuyá) logrando ese contraste de sabores entre lo dulce del chocolate y lo ácido de esta fruta tropical, una combinación que dejará un sabor espectacular en tu paladar y con ganas de querer otra mordidita de este postre.

This time we will take advantage of the delicious goodness that cocoa powder offers us and we will make a delicious pancake that we will fill with a tasty and appreciated passion fruit cream, achieving that contrast of flavors between the sweetness of chocolate and the acidity of this tropical fruit, a combination that will leave a spectacular taste on your palate and make you want to want another bite of this dessert.

Para nuestra receta necesitamos lo siguiente:

Ingredientes a utilizar:

• 1 ½ tazas de harina de trigo
• 6 cucharadas de cacao en polvo (3 para el panqué y 3 para el sirope)
• 1 taza de azúcar
• ¼ de taza de aceite vegetal
• 1 coco (para extraer la leche)
• Un chorrito de vainilla
• 2 cucharadas de fécula de maíz.
• La pulpa de dos parchitas (maracuyá)

For our recipe we need the following:

Ingredients to use:

  • 1 ½ cups of wheat flour
  • 6 tablespoons cocoa powder (3 for the pancake and 3 for the syrup)
  • 1 cups of sugar
  • ¼ cup vegetable oil
  • 1 coconut (to extract the milk)
  • A dash of vanilla
  • 2 tablespoons cornstarch.
  • The pulp of two passion fruit (maracuya)

Paso a paso para la preparación de la receta:

Partir el coco y extraer su pulpa y con un poco de agua pasarlo por un procesador de alimentos para posteriormente colar y así obtener su leche.

Step by step for the preparation of the recipe:

Split the coconut and extract its pulp and with a little water pass it through a food processor and then strain it to obtain its milk.

En un bol colocar el azúcar, aceite, la leche de coco (una taza) luego la harina de trigo y mezclar, posteriormente añadimos 3 cucharadas de cacao en polvo y nuevamente mezclar hasta incorporar todos los ingredientes.

In a bowl place the sugar, oil, coconut milk (one cup) then the wheat flour and mix, then add 3 tablespoons of cocoa powder and mix again until all the ingredients are incorporated.

Colocar la mezcla obtenida en un envase para horno previamente engrasado y enharinado para luego llevar al horno a 180 grados por espacio de 25 minutos aproximadamente.

Place the mixture in a greased and floured baking dish and then bake in the oven at 180 degrees for approximately 25 minutes.

Para la elaboración del relleno, en este caso la crema de parchita (maracuyá) llevamos a la licuadora la pulpa de la parchita con un vaso de agua, licuamos y colamos para obtener su jugo y reservar, mientras disolvemos dos cucharadas de fécula de maíz en ½ taza de leche de coco, llevar a fuego bajo e ir removiendo para posteriormente agregar una taza de jugo de parchita hasta obtener una mezcla espesa la cual endulzaremos al gusto y reservar.

To prepare the filling, in this case the passion fruit cream, we take to the blender the pulp of the passion fruit with a glass of water, blend and strain to obtain its juice and set aside, while we dissolve two tablespoons of cornstarch in ½ cup of coconut milk, bring to low heat and stir and then add a cup of passion fruit juice to obtain a thick mixture which we will sweeten to taste and set aside.

Para la preparación del sirope vamos a necesitar primeramente ½ taza de agua que la llevaremos a calentar en una olla a fuego bajo, una vez caliente añadimos 5 cucharadas de azúcar mientras revolvemos hasta lograr que se disuelva completamente, ya disuelta el azúcar agregamos la vainilla y posteriormente 3 cucharadas de cacao en polvo mientras vamos removiendo hasta obtener la consistencia de sirope.

To prepare the syrup we will first need ½ cup of water that we will heat in a pot over low heat, once hot add 5 tablespoons of sugar while stirring until it is completely dissolved, once the sugar is dissolved add the vanilla and then 3 tablespoons of cocoa powder while stirring until the consistency of syrup is obtained.

Una vez cocido el panqué y reposado, separar en dos partes y agregar en una de las mitades la crema de parchita (maracuyá) luego colocarle la otra mitad encima de la crema y refrigerar por espacio de una hora.

Once the pancake is cooked and rested, separate into two parts and add the passion fruit cream to one of the halves, then place the other half on top of the cream and refrigerate for one hour.

Pasada la hora colocamos el sirope encima del panqué y listo, ya podemos degustar este sabroso y delicioso postre, una combinación de sabores exquisitos.

After the hour we place the syrup on top of the pancake and ready, we can now enjoy this tasty and delicious dessert, a combination of exquisite flavors.

This cake is delicious. I am amazed at how well it turned out, plus that mix of flavors is super interesting, the acid of passion fruit with the depth of chocolate and the creaminess of coconut, a total delight. A really good recipe.
