Hello hiveans... how are you all? Hope all are enjoying the last month of the year.
Christmas is around the corner, and this is very special day for all who celebrates this day. And coming week its going to be busy. So, today I bought a quick recipe for My hive family to make this in a very less time and it will be super delicious dry Curry Of Eggplant and potato. We call it Aloo baigan ki sabji. This is effortless option for the weekdays.
Eggplant/ brinjal or aubergine 🍆 is a vegetable which is combined with potato leads to a unique flavour. There are lots of different ways to make Brinjal curry. But I love to eat Brinjal with potatoes and I am sure you will love this too.
It goes well when served with Rotis.
Serving 2
INGREDIENTS
Eggplant-4 to 5
Potatoes-3
Cumin seeds-½tbspn
Asofeadita-½tspn
Oil-2tbspn
Turmeric powder-½tspn
Salt-to the taste
Coriander powder-½tspn
Redchili powder-½tspn
Chat masala-½tspn
METHOD
1.take eggplants and wash them properly.
2.now in a big bowl of water cut th eggplants to prevent them to become brown or black due to oxidization
3.now heat oil in a pan and add cumin seeds. Then add asofaedita.
4.add chopped potatoes.
5.then mix it and saute it for 5 min.
6.then add brinjals or eggplants.
7.now add turmeric powder, salt, red chili powder and mix it..
8.Now Let it cook for 10 mins till the potatoes and brinjals are soft.
8.then add coriander powder and chat masala. Off the flame.
Mi it well
9.and its ready to serve with Hot rotis. Transfer it in a bowl.
