Hey vegan lovers, happy running your activities wherever you are. The weather in my area lately is quite extreme, yesterday it was hot and today the sky started to rain heavily again. Due to the extreme weather lately, I have to take a few days off not to do much outdoor activities, because yesterday I had a high fever, and I needed to rest. After yesterday's complete rest all day, I am very grateful that today I am a bit better, and can do light activities as usual. It's like being addicted to greeting all of you here, it feels like if I don't interact on this platform, it makes me feel different because now this platform has become part of my daily activities. Sauteed Purple Eggplant
Serving purple eggplant with tempeh has been done very often by everyone, including me. Eggplant is my favorite vegetable, processed with various types of food will be very delicious, especially when combined with tempeh will definitely have a distinctive taste. This purple eggplant stir fry is a very popular menu in Indonesia and is served as a side dish for lunch with warm white rice. Fried eggplant is usually synonymous with spicy taste, because this time I don't want it to be too spicy, I just use ordinary chili.
Materials Used
- 2 eggplants
- 1 piece of tempeh
- 1 tomato
- 3 cloves of red onion
- 1 clove of garlic
- 2 red chilies
- 3 green chilies
- 1 teaspoon salt
Cooking Steps
Step 1
First, I started cutting all the ingredients, cut according to taste here I cut into small pieces.Step 2
Then, I started to sauté the shallots and garlic, then add the tomatoes and red chilies and green chilies.Step 3
Stir and stir-fry all ingredients until wilted, then add 1 teaspoon of salt, stir-fry until completely wilted.Step 4
Then enter all the tempeh that has been cut, then add enough water, don't forget to stir.Step 5
Next, add the eggplant that has been cut into small pieces. Cook for about 10 minutes or until the eggplant is cooked through. So when cooking, don't forget to close it.Result
Sauteed purple eggplant with a combination of tempeh is my favorite menu, even my extended family. The taste of this stir-fried eggplant is very suitable for my tongue, the savory taste is a little spicy just right, the soft texture of the eggplant and the very tempting tempeh will give a different taste and color to this dish. Eggplant is often seasoned with chili paste in my area, but in my opinion making this menu is one way to develop a recipe for processing eggplant for something delicious and will even become a dish on the family menu at home.
