Lately, I really like eating sweet potatoes. All kinds of sweet potatoes, I process them into food, I always see a lot of recipes on youtube and ask the neighbors. I have tried various recipes, ranging from very simple to complex to cook.
Sweet potato is a type of food that is very easy to get, especially in the area around my house. Here, many fields are used to grow tubers, including sweet potatoes. Some grow sweet potatoes, cassava, purple sweet potatoes and many others. Actually, I really want the sweet potato. This type of sweet potato is very famous because it has a very sweet and natural caramel. This type of cilembu sweet potato can only be planted in the village of Cilembu, West Java.
In the past, I often bought cilembu sweet potato at my regular place, usually cilembu sweet potato was baked and could be eaten right away. But unfortunately, the sweet potato seller has moved, he doesn't know where.
To treat my longing for sweet potatoes, I bought 1 kg of orange yams. Then I steamed and ate it just like that, without any mixture. The taste is very sweet and melts on the tongue, the taste is almost similar to cilembu sweet potato, but the caramel taste of cilembu sweet potato cannot be replaced by any sweet potato.
I steamed too much sweet potato, there was 1 more sweet potato left. Instead of just wasting it, I should process this sweet potato with the ingredients I have at home. Luckily I have leftover glutinous rice flour, I'm going to make a pepare cake, I'm going to shape this cake like a bitter gourd. So, check out the following recipe!
Ingredients:
- 120 gr yam (can use sweet potato)
- 2 packs of coconut milk
- 250 gr glutinous rice flour
- 10 gr cornstarch
- Pandan leaves (can use pandan paste)
- 50 grams of sugar
- Coconut core (coconut mixed with palm sugar)
- Salt
- Aid
- Banana leaf
How to cook Pepare Cake:
- Boil 120 grams of yam, then puree.
- Combine sweet potato, glutinous rice flour, 150 ml of water, pandan paste, 20 gr sugar, and pinch of salt. Stir until well blended.
- Take a spoon of dough, then put a coconut core in the middle of the dough and shape it like a bitter gourd. Use a banana leaf base.
- Steam for 20 minutes.
- To make coconut milk sauce: mix cornstarch, 30 gr sugar, pinch of salt and 100 ml water. Also add pandan leaves. Cook on medium heat until the sauce becomes slightly thick.
- Pepare cake is ready to be served!
