Most of the presentation of dinner meals as simple as possible. Made after work, our energy is running low. So, it will really help us if we can make a practical dinner.
In this recipe for a dinner meal, I will serve Potato Bowl. This dish is inspired by the popular rice bowl dish in my country. A rice bowl is a way of serving rice with various side dishes in it at once. So, for this Potato Bowl, I will also fill the bowl with various side dishes.
The Ingredients
- 2 king oyster mushrooms
- roasted baby potatoes
- green veggies, here I use pakchoy
- 2-3 tablespoons of peanut butter sauce
- 3 tablespoons of chopped red onion mixed with garlic
- 1/2 of teaspoon salt
Air-fryer Potatoes With Peanut Sauce
Actually, I made this recipe a while ago. To be precise, when I finished making the recipe for air-fryer baby potatoes with peanut sauce. I had leftover baby potatoes that time. So, I decided to add some ingredients for dinner.

After the baby potatoes were cooked by roasting using the air-fryer, I mixed them with the peanut butter sauce. I also have leftover peanut sauce. So, I really saved time for serving dinner at that time.
For seasoning, I use peanut butter sauce. How to make is very easy. We only need to mix a few tablespoons of peanut butter with chili powder and coconut milk. If you don't like coconut milk, you can add hot water to change the consistency of the peanut butter texture.
I often make this seasoning for meal prep and then store it in an airtight container and then I put it in the refrigerator for the next few days. Mostly, I use peanut butter sauce for salad dressing or roasted food like this time.
Baby Pakchoy
In this dish, I chose baby pakchoy for green veggies elements. I always make it a habit to include green veggies. Baby pakchoy has a texture that is not too hard on the stem because the size of the stem is not thick.
So, in this recipe, I don't need to blanch the pakchoy first. For other green veggies that have a thick texture, I suggest you to blanch them first before mixing them with the seasoning.
Cooking King Oyster Mushrooms
Honestly, this is my first time serving King Oyster Mushrooms because I don't always get their stock in the market. Once I found them, I didn't hesitate to buy them.
I sliced them thin, into 3-4 pieces per mushroom. After slicing, I sliced the slices. Like we make slices of fish meat before baking.
Then, I cook them in a pan with a little oil. Cook them on both sides of them. I use a pan in general because I don't have a grill pan. You can use another grill tool if you have one of those.
Mix All Ingredients Together
Heat the oil. Then, stir-fry chopped red onion and garlic until they smell good.
After the garlic and red onions give off a nice aroma, it's time to add the peanut butter sauce with enough water. Also, add salt. The amount of water is adjusted to the level of thickness of the gravy we want.
Bring the gravy to a simmer. Then, add the grilled king oyster mushrooms. Cook them for about 10 minutes.
After the king oyster mushrooms are almost cooked, add the pakcoy. Cook them for a few more minutes until the pakchoy wilts.
Serving!
Serve elements of green veggies and king oyster mushrooms with roasted baby potatoes. Anyway, you can serve those ingredients with rice, lentils, or even your other favorite carbohydrates. Don't be afraid to get creative.
What I like about the dinner meal ingredients this time is the peanut butter sauce which is comfortable on my tongue. It was also accepted by my husband's tongue.
