Today I went to uncle Nana's house for a visit, He loves cooking more food for his visitors. On his Normal he cooks less for himself alone because he doesn't eat that much. Uncle Nana is a generous single man who believes that hospitality and kindness is a way of making the world 🌎 a better place. So for this belief of his people nicknamed as "the good Samaritan" because he acts like the name.
When I arrived at his house he gave me a nice welcome and a chill water which I use to cool my nerves. I was looking around to see if he will serve me food 😀 because I was very hungry 🥱 and desperate to test his delicacies, but I saw him bringing nothing because he hasn't made any lunch for the day. Then we begin to converse, after a while he notices that I am hungry 🥱 so he asked me to make a choice of what he will prepare for me, I was shy to say what is in mind so I said anything is ok by me, but he insisted that I must choose. So I choose my favorite coconut spaghetti and beans. Because he loves cooking he does store raw food items in his house so he began the process immediately to satisfy my hunger.
Procedures for making coconut spaghetti and beans.
Coconut spaghetti and beans is a delicious and nutritious dish that combines the flavors of coconut, spaghetti pasta, and beans. Here's a simple recipe and the procedures for making it:
Ingredients:
spaghetti pasta
cooked beans (black beans, red kidney beans, or any beans of your choice)
Coconut
onion, chopped
Garlic, minced (it is optional)
Red pepper, diced
Green bell pepper, diced
1 teaspoon curry powder
1 teaspoon dried thyme
Salt and pepper to taste
Seasoning cubes
vegetable oil
Fresh parsley or cilantro for garnish (optional)
Tomatoes 🍅
Procedures:
Get your coconut and break it to remove the back from it, and ensure that there are no particles of the back on the coconut.
Wash your coconut neatly with water to avoid dirt during the breaking process. And ensure that your coconut is very white which shows that it is clean.
Grand the coconut with a grander to make it in a little bit by bit. This process makes the coconut water and nutrients to be able to mix easily with other sources.
Cook Spaghetti: Bring a large pot of water to a boil. Add the spaghetti pasta and cook according to package instructions until it is half done. Drain the cooked spaghetti and set aside.
Cooked Beans: If using canned beans, rinse and drain them. If using dried beans, soak them overnight, then cook until tender. Set aside.
Get a frying pan put on the fire and allow it to be a little bit hot. Then add your vegetable or palm oil depending on your choice. Allow the oil to get fry, add your onions,🧅 pepper 🌶️, tomatoes 🍅 and any other vegetable.
Add water to the fried source then, add seasoning and every other ingredient together and allow it to boil so that it can mix properly.
Add your boiled spaghetti and beans then cover for some time.
Serve: Transfer the coconut spaghetti and beans to serving plates or bowls. Garnish with fresh parsley or cilantro if desired.
