Today posting another recipe quite creative banana breads from overripe bananas.
Banana bread with chocolate
With cinnamon
Ingrdients:
When we buy organic bananas they go very fast over ripe and turn black.
Ingredients:
3 bananas
3 cups white flour
1/2 cup milk
1/3 cup brown sugar
1/3 cup avocado oil
2 tsp sugar
1 tsp salt
1 tsp dried yeast
2 tsp cinnamon powder
1-4 cup cocoa powder.
Peel bananas.
Cut it in small pieces.
smash with a fork.
In a bowl add salt, sugar, and yeast.
Add milk.
Stir well until all ingredients are mixed.
Add the mashed bananas.
beat together with a whisp, fork or immersion mixer.
stir in the oil.
Add 2 1/2 cups flour.
stir with a spatula.
Our bananas are extra moist so i used a little extra flour making an appropriate dough which easy to roll into small flatbreads.
Keep covered in a bowl and let it rest for 1 hour.
meanwhile make a gooey chocolate sauce and a cinnamon powder mixture.
Making gooey chocolate sauce 1/4 cocoa powder, 2 tsp sugar, 2 tsp milk, 1 tbsp butter mix together and cook on low heat until it boils.
mix together 2 tsp cinnamon powder and 3 tsp brown sugar and keep aside.
When dough is ready punch it lightly.
divide into two parts one part for chocolate and one for cinnamon.
From one portion make appropriate size balls big or small your choice.
I made total 10 balls for the chocolate and remining half for cinnamon kept without cutting.
flatten one ball and put a spoonful of chocolate on the center.
form back into a ball concealing the chocolate.
And roll it carefully without the filling coming out.
Make cuts in rolled sheet keeping half part solid, using knife or pizza cutter cut half part of rolled sheet making small strips.
Here is where it gets really creative.
Lifting one strip at a time twist it as shown in photo.
It will look like that after twisted all strips.
Roll the whole dough carefully starting from the solid side.
It will look like this.
once again, fill chocolate in the flattened dough ball.
form back into a ball.
Roll it lightly using rolling pin.
Using cutter cut strips but not all the way.
Lifting and twisting one by one strip, .
It looks like this.
Roll the bread starting from solid part
see the photos carefully, don't worry if the strips are uneven they will stick together.
finish rolling.
For cinnamon rolls
Roll the remaining dough.
Sprinkle with the cinnamon sugar
Roll it carefully.
slice into spiral rounds.
once again
roll the remaining dough in sheet.
Sprinkle sugar cinnamon evenly.
Roll the sheet
Slice the roll.
They look like spiral
dip them one by one in the remaining cinnamon sugar .
Preheat oven for 180 C
Set all banana bread rolls on a baking tray.
bake them around 25-30 minutes it various oven to oven after 20 minutes keep an eye on them to avoid overbaking.
cool on a rack.
