When it is cold outside, and believe me it has been COLD, there are certain things I like to make to warn off the cold. In other words, I love to warm up from the inside out with some hot coffee or tea and a meal that has a little heat. What could be better than a nice chicken curry?!? Let's jump right into it!
First we're going to start with one and a half teaspoons of ground coriander.
Then we need one teaspoon of ground cumin.
Add one half teaspoon of turmeric .
Add to that a half teaspoon of ground cinnamon.
Add half a teaspoon of ground black pepper.
Now one teaspoon of ground mustard.
Also 1/4 tsp of ground cloves.
Now I saute a cup of fresh onions.
Add two teaspoons of minced garlic.
While the onions are starting to go clear I add in one half teaspoon of ground ginger.
Now it's time to add one cup of chicken broth.
Next I drain and add in one can of diced tomatoes.
Next I cut up, boil, and add 1 lb of chicken.
Turning the heat down to low I add 1/3 of a cup of heavy cream.
Now this is a fun part. This is where you have to decide how hot you want your meal. Like I say when it's cold outside I want it to have a little bit of a bite, just a little bit of spice.
If you've never tried Slap Ya Mama seasoning, I would run right out and get you some LOL. It adds a bit of heat and a lot of flavor.
Now I always eat this over rice which is lovely. Sadly this time there is no money shot. I have to admit that once I started eating, I forgot all about filming. I know what a rookie mistake! Oh well it is my dementia kicking in I suppose, or ravenous hunger, or both LOL. I know some people like to add cilantro to this dish. I'm not a huge cilantro fan so I like it just how it is.
