Day 4 - Beetroot Smoothie
Today I want to share with you a smoothie that I've been wanting to make for a long time, but never actually acted upon until today. A few reasons for that are simply because whenever I thought about this smoothie variation with beetroot, I could not find beetroot while ordering groceries. Another reason was that other moments I simply forgot and just blended my regular smoothie variations instead.
I've been trying to find simple ways to introduce other healthy veggies and fruit to our daughter and every time it turns out that the smoothie option is simply the easiest way to make her try it and then saying she likes it, which is the most important part because otherwise I already know that next time it will cause me hours of struggle and headache but this kid just will not do it. Therefore I find it easier to make sure she will enjoy it instead. Win win for us all!
Last week when I was ordering my groceries I accidentally saw beetroot and did not hesitate to put it in the shopping cart. It's not guaranteed that they will deliver it though because sometimes when they pack your order, it turns out some items are not available after all. I've had my fingers crossed for two days that at least they'd deliver the beetroot. And so they did.
I was not really looking forward to the mess, especially not after noticing the package was leaking a bit and it seems a very difficult color to remove from certain surfaces, like curcuma. Today I had a good kitchen vibe and decided we'd have a pink smoothie today. The pink part is the part that made me successfully hype the smoothie for a few days, lol.
I had no clue about the proportions but I knew I'd use beetroot, banana, chia seeds and coconut milk (sugar free). I got lucky the previous week finding the coconut milk on offer (second one went right back into savings) so I ordered 4 packs, as these will be useful and I love saving!
I ended up using one beetroot out of the three in the pack, cut in smaller parts and mixed it with the coconut milk. When I thought it was blended nicely, I added banana and more milk. Eventually, I ended up using 3 medium sized bananas and the one beetroot plus a tablespoon of chia seeds and some honey to make sure the little one would not refuse drinking it. I think it tasted nicely, although next time I'd probably use half a beetroot to start with and take it from there.
I had enough for 2 big and one smaller glass so we all had a good portion.
Recipe approved, and I will now work on mastering the basic recipe to later add more variations in the smoothie.
