Pechay with Tofu.
This is a very affordable, easy to make recipe and the ingredients are widely available in Asean Market.
In this recipe we can enjoy budget-friendly, healthy and delicious meal.
Let's start cooking!
Ingredients:
1/2 kg pechay (Chinese white cabbage)
5 cubes tofu
1 medium size onion
3 cloves of garlic
2 medium tomatoes
1 tablespoon oil (sauté)
1/2 cup of oil (frying the tofu)
3 tablespoons soy sauce
1/2 teaspoon pepper
1/2 cup of water
Instructions:
Prepare all the ingredients and wash the Pechay thoroughly.
Chop all the vegetables. During chopping of pechay I separate the stem from the leaves.
Fry the tofu and then set aside.
Heat the pan and saute garlic and onion until the aromatics are fully cooked.
Add the tomatoes, once the tomato softens put the soy sauce and pepper.
Put the stem of the pechay and the water. (I prefer putting the stem first because it takes longer to cook than the leaves.) Let it simmer for 2 minutes.
While simmering you can now cut the tofu into smaller cubes.
Add the Pechay leaves and then gently mix. Let it cook for 2 minutes.
Add the tofu cubes and gently toss it all together. Do not overcook!
Transfer to a serving bowl.
Serve with rice, share and enjoy!
We used to plant pechay in recyclable containers in front of our house. It's easy to grow even in small spaces. This leafy vegetable is very common in Southeast Asean and popular in the Philippines for stew, soup and stir-fry. It is also great with fish and coconut milk!
