Eggplants are vegetables that are widely spread in summer in my place.
One of the most popular dishes is eggplant "caviar".
We can eat it as a separate dish or as addition to pasta but as a rule it works the best with bread - mmm, yummy!;)
We need:
- eggplants
- tomatoes
- pepper
- salt, garlic, plant oil
At first we need to soak eggplants in salty water to let their bitterness go away.
Then we bake them for 10-15 min.
Pepper can be baked as well but I prefer to add them fresh.
When eggplants are ready, we peel them and add there cut tomatoes and pepper and blend them carefully until we get "caviar" consistency.
It should be not liquid and not thick, something middle.
Spices are added in the very end.
My family loves this dish very much, and in summer when there is no great appetite because of heat, such light veggie dishes are the best.
