Sauteed chayote is a delicious and simple vegetable dish that is easy to prepare. It is sauteed in garlic, onion and tomato. You may also add other vegetables such as carrots, capsicum or any vegetable that is available. For many, meat such as ground pork or beef is added in sauteeing, But today I will opt for a simple yet tasty vegan dish and flavor it with just salt and pepper.
Chayote or vegetable pear belongs in a gourd family. It is usually cooked through sauteing or a best addition to chicken soup.
Ingredients
Chayote
Garlic
Onion
Tomato
Capsicum
Carrot
Preparations
Peel and chop the chayote. Mince the garlic and chop the remaining vegetables.
Heat the pan and add oil. Saute onion and garlic until fragrant.
Add the chopped chayote and Stir cook for a couple of minutes.
Next, add in the chopped tomato and stir to combine well.
Then add the carrots and capsicum and cook until tender. Cover with lid and simmer for 10 - 15 minutes.
Season with salt and ground pepper to bring out flavor. Simmer for another 2 minutes and serve.
Sauteed chayote is usually eaten with rice, It can also be served as a side dish.
