Pineapple Chicken (Pininyahang Manok)

Pineapple chicken or Pininyahang manok in Tagalog (Filipino Language) is a delicious dish where chicken meat is marinated in pineapple juice. Marinate your meat at least 30 minutes or overnight for the ultimate result. There are two ways to cook pineapple chicken, one is by adding fresh milk/evaporated milk and the other is by using coconut milk. They are both flavorful, rich and creamy. Pineapple is also added in this dish so that makes it tangy and sweet.

Marination helps the meat to become tender as well as absorbing the flavor. The longer the marination, the better it tastes. I usually love using herbs such as pandan leaves and ginger to my meat dishes, It gives you these natural extra flavor.

Ingredients

Chicken, medium cut
Garlic
Onion
Ginger, crushed, optional
Pandan leaves, optional
Tomatoes, quartered
Red or green capsicum
Carrots, sliced
Pineapple chunks with juice
Fresh milk, 1-2 cups
Fish sauce, 2 tbsp
Black pepper, ground
Salt

Preparations

  1. Marinate the meat with the pineapple juice for at least 30 minutes or overnight. Save the liquid after marination.

  2. Saute garlic, onion and ginger if using until soft and aromatic.

  3. Throw in the chicken meat and saute until lightly brown. Add the fish sauce for initial flavor.

  4. Add the chopped tomatoes and cook until mushy.

  5. Pour the pineapple juice (from the marination) and fresh milk. Let it boil and reduce to low heat. Add the pandan or bay leaves if using.

  6. Cover the pot and Simmer for 25 - 30 minutes.

  7. Then add the carrots, capsicum and the pineapple chunks.

  8. Season with salt and pepper, Serve warm with boiled rice.
