Well, on this sunny Monday, Ema and I will share a recipe for a traditional cake from Palembang. This cake is called Lumpang cake and is included in the category of wet cakes which are very popular in Indonesia. Lumpang cake is made from rice flour and tapioca flour, this Lumpang cake also has 2 different versions, the first is the Lumpang Pandan cake and the second is the brown sugar Lumpang cake. Well, the ingredients for making this brown sugar lump cake certainly don't require a lot of money and you can buy all the ingredients for this recipe at the nearest supermarket or market in your city. The first ingredients you have to prepare are wheat flour, starch, salt, white coconut, brown sugar, pandan leaves, mineral water and cake molds. after you have prepared all the ingredients, now let's start the first step of making the brown sugar lump cake.
The first step, what you have to do first is prepare a bowl and put 150 grams of white coconut, half a teaspoon of salt and a piece of pandan leaf. After that, stir until well blended. then, prepare a steamer and preheat it for a few minutes. After the steamer is hot, put a bowl containing white coconut and steam it for about 10 minutes over medium heat so that the coconut doesn't go stale easily.
the second step, while the white coconut is being steamed for 10 minutes, then prepare 110 grams of brown sugar with good quality and after that cut the brown sugar so that the brown sugar quickly dissolves when cooked.
the third step, after you have cut the brown sugar to completion, then prepare a pan and put all the brown sugar that you have cut into pieces, 450 ml of mineral water, 2 tablespoons of granulated sugar and 1 pandan leaf. then, cook and stir until the brown sugar dissolves and boils using only medium heat.
the fourth step, after the brown sugar dissolves and also boils, then strain the brown sugar water so that there are no impurities from the brown sugar attached and after that set the brown sugar water aside after being filtered.
the fifth step, after the brown sugar water is finished and is being left warm, the next thing you have to do is prepare a place and put 10 tablespoons of flour, 10 tablespoons of tapioca flour and half a teaspoon of salt. after that, stir the dry mixture until well blended using a spoon only.
the sixth step, after the dry dough has been stirred until well blended, then what you have to do is gradually put the brown sugar water into the dry dough, stir until it is completely smooth and there are no lumps of flour.
the seventh step, after you have stirred the dry dough and brown sugar water until it is well mixed and smooth, then prepare the cake mold and spread the cooking oil evenly in the cake mold until it is finished.
the eighth step, after all the cake molds have been smeared with cooking oil, then slowly put the dough into the cake mold and prepare a steamer. Don't forget to heat the steamer to make it cook faster. After the steamer is hot, steam the dough for about 15 or 20 minutes using only medium heat.
the last step, after the dough is cooked, then transfer the white coconut into a plate and put one by one the cakes into the coconut white plate. Spread evenly all the cakes to finish and cover the cake.
and finally, after all the cakes have been smeared with coconut white, now you can eat this Lumpeng cake with your family or friends. for the taste of this Lumpang cake it is really very old and indeed this Lumpang cake is an old snack for certain regions in Indonesia.
