Hiiiii,
this is my first post in this community, I hope you like it and you even give it a try if you have an abundance of cherry tomatoes.
This year we sure do have an abundance of cherry tomatoes in #Bulgaria. I have plenty of red ones and my dear friend @anikad brought bunch of purple cherry tomatoes and yellow submarine tomatoes. (the purple ones look red on some images and on some purple-ish, in real life they we something in between 😄) So this year is my first one to try two recipes.
The first sweet recipe is super simple, you only need cherry tomatoes, sugar and lemon juice (or citric acid if you don't have lemon). Proportions...well I have never followed the recipes I find online. I always just check them out for ideas and then I do my own thing.( You can find plenty of recipes online if you need exact proportions). What I did:
- Washed, cleaned from stems and halved the tomatoes;
- Placed them in pot and added sugar. In the recipe I saw, water was another ingredient, I tried the first batch with some water and the next one without. The result - the one without water was with better consistency, more as quantity, and richer taste because the tomatoes cook in their own sauce. The sugar ...well, I add some then I try it, then if it's not the taste I like I add more, that's how I measure quantity - by taste. 😄
- When the consistency is like jam, remove it from the stove/ fire and then add just a little bit of lemon juice, that is to preserve it.
- Place in jars, and put them upside down. When they cool off check the lids if they are all well vacuumed. If you press the lid and it pops, kind of, you feel there is air inside the jar, I suggest you eat it first or you can try boiling the jar to get the air out.
Voila, that's it! We enjoy it with cheese , as a dip or just on bread....up to your taste!
The second recipe is pretty much the same but I made it spicy. After I placed the cherry tomatoes in the pot and they let their juice, I added 5-6 spicy peppers (not sure what kind), which I roasted on the fire before this, peeled their skin and chopped them. Another ingredient I added were shredded carrots, like 6 of them, mine were from the garden so they were not very big. The result - light, not too spicy, sweet jam.
There are many, many recipes out there. Everyone has their own twist, which is awesome! I personally prefer to use simpler recipes, this way I think I can feel the taste of the ingredients better. But I love trying and seeing what everyone else is cooking 😊 that is why I joined this community.
