Lasagna is one of my favorite foods well as "Garfield". It's a dish that has everything I love. The pasta is soft, and juicy and always has delicious fillings. But the best part is the melted mozzarella cheese.
Many times when I think that I have to turn on the oven to melt the cheese in my lasagna, I get very lazy. However, if you are one of those who don't like to turn on the oven or don't have this appliance at home, today I will show you how to make a delicious lasagna in the microwave.
After a few festive days, my body needs a dose of vegetables. I feel I'm saturated with so much pork and meat from Christmas preparations. So I went in search of some vegetables and got some beautiful spinach, so I thought it would make an excellent filling for a delicious lasagna.
4 cups of raw spinach leaves
1 medium onion
3 tablespoons of wheat flour or cornstarch
1 cup of milk
1 cup Neapolitan sauce
2 cups shredded mozzarella cheese
2 tablespoons vegetable oil
salt and pepper to taste
Lasagna pasta sheets
Lasagna sheets are sheets of dry pasta. These sheets should be cooked for 5 minutes in hot water and become soft and flexible.
Once the lasagna sheets are cooked, you should put them aside in a bowl with cold water to prevent them from sticking together.
Another previous step is to prepare the Neapolitan sauce. To make this sauce, you can blend tomatoes and cook them until it reduces their volume and thickens. This sauce can be seasoned with garlic powder, dried oregano, salt, and pepper.
To make the filling, wash the spinach leaves and poach them in hot water for 3 minutes.
By poaching spinach leaves, we can minimize their bitter taste and soften the texture of this vegetable.
Strain and drain the spinach well and chop it finely.
Cut the onion into small cubes and sauté it in hot oil.
Add chopped spinach and stir well.
Sprinkle the wheat flour or cornstarch over the spinach. Stir well and add the milk. In case you are lactose intolerant, you can use soy milk.
Add salt. Lower the heat and cook for 5 minutes stirring constantly until thickened.
Drain the cooked lasagna sheets and place a layer in a glass or plastic container.
Place a layer of spinach filling and then some mozzarella cheese.
Cover with lasagna sheets and repeat the previous step until you reach the top of the pan. Cover with Neapolitan sauce.
Sprinkle mozzarella cheese, cover the container with plastic wrap, and microwave for 2 minutes.
You can serve a generous portion of this lasagna or perhaps a smaller one and accompany it with a fresh salad.
