Corn and Bacon Scones

Hello friends!

Corn is a very versatile food. It is an ingredient widely used in America. The first settlers of this continent prepared delicious flatbreads with corn. They are preparations that have prevailed through the centuries.

Today, I want to share a recipe for corn scones with bacon. These are scones that you can use for breakfast or as a snack. The good thing about this recipe is that it is easy to prepare and does not require a lot of time to make.

One of the things I like about corn and bacon scones is the contrast of flavors. The corn brings an incredible sweetness, and the bacon has a delicious smoky flavor and aroma.

These scones are very soft. When they just come out of the oven, they crumble as they enter your mouth. I'm not going to tell you more, so let's get to work!

Ingredients

1 cup wheat flour
1/2 cup salted butter
1 cup of corn (fresh or canned), crushed
1/2 cup yogurt
1 tablespoon sugar
1 tablespoon of yeast
100 grams bacon

Yields 12 servings

Cut the bacon into small cubes. In a non-stick frying pan, fry the bacon until golden brown. Drain the fat well and set it aside on a plate.

To prepare the dough, place all the dry ingredients in a bowl (flour, sugar, and yeast). Mix everything well. Add the butter. With the help of a fork, mix the flour and butter until you get a sandy texture.

In a separate bowl, place the crushed corn and mix it with the yogurt until you get a paste.


The secret to the softness of these scones is butter and yogurt.
If you don't have yogurt, you can substitute 1 egg.
You can also substitute 1/2 cup milk with 1/2 tablespoon vinegar.

Add the corn dough to the flour and knead until the ingredients are combined. Spread the dough on a non-stick surface and place the previously toasted bacon pieces. Knead again until a homogeneous dough is formed.

Roll out the dough with a rolling pin on a non-stick surface. Make sure the dough is 1 centimeter thick.

Using a circular cookie cutter, cut several portions. To obtain good sized scones, use cutters 6 centimeters in diameter.

Place the dough circles on a tray and bake for 25 minutes at 180ºC.

As soon as they come out of the oven, you can serve them as part of your breakfast. I served these delicious corn scones with fried egg and orange juice.

The aroma of these freshly baked scones whets your appetite, and you can't stop eating them. Sometimes, I eat them as a snack by spreading them with cream cheese. I confess they are a temptation 😁.
