OPENING UP A PIZZA CAFE!!!

You must be joking!!! Open up a Cafe?!!! No thank you!!! Been there - done that - threw away the t-shirt! I loved having my own little Cafe, more for the people that I could interact with, than all the food preparations. Did I mention that it was a health restaurant? Knowing how many people are limited in choices while having violent reactions to certain foods; gluten, lactose and very often all the chemicals, preservatives and GMO lacing our modern day diet, I opened a unique Cafe. My purpose was to educate as well as feed the food intolerant side of society. It was so satisfying to help people and excite them about healthier alternatives which were still yummy. But it is emotionally demanding as well as more than a full time job. Opening up a Cafe again?! No thank you. I value my sleep. And my sanity. And time with my beloved family above all.

Today has been another successful one sweating in front of our pizza oven. It is always a hard - slightly stressful - day but so rewarding. Of course it is also delicious and saves huge cook-ups for the next week. First on the menu was another batch of cookies. The BuckarooBabies made them - under supervision. Quick. Easy. Delicious. Peanut butter and cacao chip cookies settle the children for the first hour. (Yes, I will be sharing the recipe). They play with a cookie in hand while we chop and peel and whisk and knead and wash, rinse, repeat.....

My clever husband even whipped up Shakshuka. Freshly made goats milk feta, basil, hour old eggs and a generous dose of tomato, onion and garlic. Yummy. It kept us going most of the day. While the dishes went in. And came out.

Despite the cool summer days it is a scorcher working beside that pizza oven all day. I made a huge jug of iced tea. Half a cup of honeybush leaves simmering for half an hour. A couple tablespoons of honey dissolved in the strained honeybush (once it's cool enough). Then left in the fridge to chill with handfuls of fresh lemon verbena and peppermint. So refreshingly delicious!

Tomorrow I think we will reward ourselves by doing absolutely nothing. Except milk the goats. And refresh the chickens nests. And wash dishes. And fold away clothes. And plant out the new seedlings. And tackle the newest homeschooling book. And make yoghurt. And....then? I will do absolutely nothing.....

The food looks so fresh and yummy!
I bet your Cafe was amazing, the idea of preparing non-GMO food, educating people and caring for the minority that usually have a hard time eating outside, is everything that the restaurants should do to bring up the standards.
I do understand you on the sanity, time and seeing your family, I did work in a food industry a while ago.
Unfortunately I didn't get to experience working at restaurants that promotes a healthy lifestyle.

There are very few restaurants that focus on health and educating people. Sadly the food industry is like so many businesses, about making money. I like that expression "give a man a fish and he will eat for one day - teach a man to fish and he will eat for a lifetime"
