Sweet potato toast is great choice for a healthy breakfast option as a substitute for bread or rice.
Have you ever tried turning sweet potatoes into toast? I've done that many times, and this time I'm going to share the recipe for sweet potato toast with peanut butter, topped with dragon fruit and yogurt.
I often replace bread or rice with sweet potato for breakfast. Especially for the breakfast menu for my mother who is a diabetic. Sweet potatoes have a lower glycemic index than rice and even potatoes. It also tastes better with natural sweetness. Even though they have a naturally sweet taste, sweet potatoes are suitable to be served with savory toppings, also with side dishes such as stir-fried tofu/tempeh, etc.
My First Time Trying Sweet Potato Toast Topped with Peanut Butter
In the past, I just tried to serve sweet potato toast with coconut cream topping, and fresh fruit. For the savory version, I serve sweet potato toast with tempeh, tofu, green beans, and more.
So, in this blog today, this is my first time trying sweet potato toast topped with peanut butter. I'm really curious what if this plant-based toast is served with peanut butter that is both savory and sweet. I also use fresh fruit. In another version, I use yogurt for a more complete taste.
Preparation
First, peel the sweet potatoes. Here I only use one sweet potato because it is big. This is enough serving 4-5 toast.
You can use 2 sweet potatoes if they are small. Make sure it can fit one baking tray. So it saves roasting time all at once.
After peeling, wash thoroughly. You can soak with water so that the sweet potato sap does not change the color of the overall texture.
Then slice the sweet potato with a large knife. Slice as thick as bread. You can remove the tapered ends of the sweet potato if you want for a nicer toast shape.
Roasting Time
After you finish spreading the slices of sweet potatoes evenly with olive oil, it's time to roast them.
Roast at 250 degrees Celsius. Flip the other side at 30 minutes, and roast again until tender and a bit brown.
Serving Time
Sweet potato toast is ready to be served with toppings. I really like the smell of toast when it comes out of the oven. The color also looks good and tempting taste. Perfect ❤️
I spread peanut butter on the hot potato toast. Whoaaaa! I didn't expect peanut butter to melt so beautifully! Look at that! Mouthwatering!
Then add slices of dragon fruit. I've prepared slices of dragon fruits that have been sliced with a serrated knife to create an aesthetically pleasing wedge shape.
Adjust the slices of dragon fruits to the shape of sweet potato toasts. Don't put dragon fruit slices that are bigger than sweet potato toasts.
I was amazed by the taste. I love the blend of melted peanut butter on top of the sweet potato toasts as well as the addition of the fresh and sweet dragon fruits. This is the version I like!
In another version, I use yogurt. This version is to create a fresher taste with the sour taste of the yogurt. This version is suitable for those of you who don't really like sweet taste.
I added coconut flakes after adding the yogurt on top of the slices of dragon fruits. The texture becomes richer with crunchier things from coconut flakes.
Which version of sweet potato toasts do you prefer? With yogurt or without yogurt? Well, you can replace yogurt with your favorite cream if you don't like the sour taste of yogurt. Or the original is much better. ❤️
